Make-Ahead Cheddar, Bacon, and Tomato Strata image

Steps:

  • Cook bacon in a large nonstick skillet over medium heat until crisp, about 10 minutes. Remove bacon from pan, reserving drippings in the skillet. Crumble when cool enough to handle.
  • Add onion to drippings in the skillet; saute for 4 minutes. Add garlic and saute for 1 minute. Remove from heat; combine onion mixture and bacon.
  • Whisk milk, eggs, basil, thyme, salt, and pepper together in a bowl until well combined.
  • Spray a 9x13-inch baking dish with cooking spray and arrange 1/2 of the bread cubes in the bottom.
  • Top bread cubes with 2/3 cup Cheddar cheese, 1/2 of the onion mixture, and 6 tomato slices. Pour 1/2 of the milk mixture over tomatoes. Top with remaining bread cubes and 2/3 cup Cheddar. Top with remaining onion mixture, tomato slices, and milk mixture. Cover and place in the refrigerator to chill at least 8 hours or up to 24 hours.
  • Preheat the oven to 325 degrees F (165 degrees C).
  • Bake strata in the preheated oven, uncovered, for 55 minutes. Sprinkle with remaining Cheddar cheese and bake until cheese melts, an additional 5 minutes. Let stand 5 minutes before serving.

Cheddar Cheese and Red Bell Pepper Strata image

Steps:

  • Preheat oven to 350°F. Melt 1 1/2 tablespoons butter in heavy large skillet over medium-high heat. Add bell pepper to skillet and sauté until just tender, about 4 minutes. Mix in green onions; sauté 1 minute longer. Remove from heat.
  • Spread 1 1/2 tablespoons butter thinly on bread. Cut bread into 1/2-inch pieces. Layer half of bread in 8 x 8 x 2-inch glass baking dish. Cover with half of cheese, then half of bell pepper mixture. Repeat layering with bread, cheese and bell pepper mixture. Beat milk, eggs, Dijon mustard, dry mustard, salt and pepper in medium bowl to blend. Pour over strata.
  • Bake strata until lightly browned on top and set in center, about 45 minutes. Let stand 10 minutes; cut into squares.

Prepare and refrigerate this cheese Strata several hours ahead of time or overnight. For breakfast, simply add bacon, sausage, or ham to the cheese strata, then pop it in the oven when you wake up, pour some coffee, and sit down to an all-in-one meal. The red pepper (cayenne) gives the strata a "Bite" that gets your heart started! I always add something extra because I do like the "Bite" (Louisiana Hot Sauce)!!

Steps:

  • Toss together bread cubes and melted butter. Place half in a lightly greased 12 x 8 x 2 inch baking dish. Sprinkle half of cheese over bread cubes. Repeat procedure with remaining bread cubes and cheese.
  • Combine remaining ingredients except celery leaves; beat well. Pour over cheese layers. Cover and refrigerate 3 hours or overnight.
  • Uncover and bake at 350 degrees F. for 30 to 40 minutes.
  • Garnish with celery leaves; serve warm.

Steps:

  • Preheat oven to 400 degrees. In a large skillet, heat oil over medium-high. Add spinach and cook, stirring constantly, until wilted, about 2 minutes. Transfer to a colander and drain, pressing with a rubber spatula to release as much liquid as possible. Divide bread and spinach among 4 small, shallow 8-ounce baking dishes.
  • In a medium bowl, whisk together eggs, milk, and 3/4 cup cheese. Season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Divide mixture evenly among baking dishes and top with 1/2 cup cheese. Steps:

  • In a small microwave-safe dish, microwave broccoli and onions in water on high for 1 minute; drain and set aside. Place bread in a shallow 3-cup baking dish coated with cooking spray.   • Brown sausage in a skillet, stirring until crumbly, drain. Whisk eggs, milk, flour, butter, salt and pepper in large bowl. Whisk in your favorite seasonings. Stir in cooked sausage, mushrooms, asparagus, cheddar cheese, Parmesan cheese and bread cubes. Spoon into an ungreased 9 x 13 inch baking dish. Cover with plastic wrap and chill overnight. MAKE-AHEAD CHEESY SPINACH AND EGG STRATA

If you are a spinach lover, then you will have to try this recipe! I have made this many times to serve at a brunch get together (I always make two of these to serve at a brunch!) Plan ahead this dish needs to chill for a minimum of 8 hours or up to 24 hours or until the custard is absorbed in the bread. You can really use any cheese that you wish I find that either asiago or Gruyere are the best! If you don't want a strong spinach taste then use only one box of frozen spinach. To save time make the spinach/mushroom filling up to 1 day in advance and refrigerate, just warm slightly in the microwave before layering in the strata. You will LOVE this!

Make-Ahead Cheesy Spinach and Egg Strata image

Steps:

  • Squeeze out as much of the moisture as possible from the spinach, then chop finely.
  • Heat butter in a large skillet over medium heat.
  • Add in the fresh mushrooms and saute for about 10-12 minutes, or until they loose their moisture completely; remove to a bowl.
  • Add in onion with nutmeg, salt and cayenne and saute for 5 minutes (adding in the garlic the last few minutes) then stir in the chopped spinach; saute for 2 minutes.
  • Transfer the mixture to the bowl with the mushrooms; mix to combine slightly.
  • Butter a 4-quart casserole dish.
  • Spread 1/3 of the cubed bread into the prepared baking dish.
  • Top with 1/3 of the spinach/mushroom mixture.
  • Sprinkle with 1/3 of BOTH cheeses.
  • Repeat layering twice (ending with the cheeses).
  • In a bowl whisk together half and half, milk, eggs, mustard.
  • Pour the milk mixture evenly over the strata in the baking dish.
  • Cover with plastic and chill for about 8 hours or up to 24 hours or until the bread is absorbed in the milk.
  • When ready to bake, let the dish stay out at room temperature for about 40 minutes before baking.
  • Set oven to 350°F (second-lowest oven rack).
  • Bake uncovered for about 45 minutes, or until puffed and golden brown.

  • In a large bowl, mix together the milk, eggs, salt, and pepper. In a medium-size bowl, toss the cheeses together.
  • Place 2 pieces of bread on the bottom of the prepared pan. The bread should cover most of the bottom. If it doesn’t not, add another piece of bread or part of one to fill in the gap. Sprinkle with one third of the cheese. Place the second layer of bread over the cheese and again, fill in any large gaps with extra bread. Carefully pour the milk and egg mixture over the entire casserole. It will seem lie a lot, but the bread will soak it up as it cooks. Top with the remaining cheese. (At this point you can cover and refrigerate the strata for up to 24 hours before baking.)
