CHEESE RYE APPETIZERS

Cheese Rye Appetizers image

Steps:

  • Preheat oven to 450°. In a small bowl, combine the first six ingredients. Spread a rounded tablespoonful over each slice of bread. Place on an ungreased baking sheet. Bake 6-8 minutes or until cheese is melted.

2 cups shredded Swiss cheese
1 cup mayonnaise
1 can (4-1/4 ounces) chopped ripe olives
4 bacon strips, cooked and crumbled
1/4 cup chopped green onions
1-1/2 teaspoons minced fresh parsley or 1/2 teaspoon dried parsley flakes
30 slices snack rye bread

Made this a few times for my oldest son. He likes to do online games with friends so I like to have something fast and ready for him to eat. Easy and really good. Enjoy.

  • Preheat oven to 350 degrees F.
  • Mix cheese, olives, onions, and mayonnaise (just enough mayo to get to spreading consistency).
  • Spread mixture on slices of rye bread (not too thin).
  • Place bread on baking sheet and bake in hot oven until cheese melts, about 5 -7 minutes.
  • Devour! But be careful -- it will singe the roof of your mouth if you're not careful. (;.

Pitted black olives and pimiento-stuffed Spanish/Manzanilla olives make it look as colorful as it is delicious. Serve it with crackers or crispinis. I also use it as a sandwich spread...it really spruces up a plain old cold-cut or deli sandwich.
