TEAR-AND-SHARE CHEESE & GARLIC ROLLS
Enjoy this cheesy garlic tear-and-share bread at a family dinner. It's perfect for feeding a crowd at a barbecue, or as a side dish to a hearty casserole

- Heat 280ml water in a saucepan for a minute until warm but not too hot to stick your finger in (don't burn yourself!). Remove from the heat, then add 50g butter. Combine the flour, yeast, sugar and 1 tsp salt in a large bowl or a tabletop mixer. Add the warm water and beat to make a soft dough. Knead for 10 mins by hand, or 5 mins in a mixer, until the dough feels stretchy and smooth. Tip into a clean, oiled bowl and cover with oiled cling film. Leave to rise for 1½-2 hrs, or until doubled in size.
- Brush a large baking tray with oil and scatter over the polenta. Knock the air out of the dough. Pinch off small pieces (about the size of a walnut), then roll each piece into a ball and put on the baking tray. Leave a little space between each dough ball.
- Heat oven to 180C/160C fan/gas 4. Cover the tray with oiled cling film, then prove for 30 mins-1 hr until the dough has doubled in size and the balls are touching. Mix the remaining butter with the garlic. When the rolls are ready to cook, brush the tops with the garlic butter and scatter with the cheeses. Bake for 25-30 mins until the dough balls are cooked through. Leave to cool for 5 mins, then serve.

- On a lightly floured surface, roll dough into a 12-in. square. In a small bowl, combine butter, chives and garlic; spread over dough. Sprinkle with mozzarella cheese and 1/4 cup Parmesan cheese. , Fold dough in half; seal edges. Cut into sixteen 3/4-in.-wide strips. Twist each strip 2-3 times; pinch ends., Place 2 in. apart in a greased 15x10x1-in. baking pan. Cover and let rise until nearly doubled, about 40 minutes. , Preheat oven to 375°. Sprinkle with remaining Parmesan cheese. Bake 13-15 minutes or until golden brown.

SAVORY GRUYèRE BREAD WITH HAM

- Heat the oven to 350ºF. Butter and flour a metal 9 × 5-inch loaf pan and set it aside.
- In a large bowl, whisk together the flour, baking powder, salt, and baking soda. Stir in the chopped ham, scallions if using, thyme, and 1¾ cups (7 ounces) of the Gruyère (reserving the rest for topping). In a separate bowl, whisk together the melted butter, eggs, and buttermilk. Add the wet mixture to the flour mixture and stir to combine. The batter will be thick.
- Transfer the batter to the prepared loaf pan and spread it out evenly, smoothing the top. Sprinkle the remaining ¼ cup (1 ounce) cheese over the top. Bake until the top springs back when lightly pressed and a skewer inserted in the center comes out with some moist crumbs attached, 45 to 55 minutes.
- Transfer the pan to a wire rack and let it cool for 10 minutes. Then remove the bread from the pan and let it cool completely on the wire rack.
CHEESY CHIVE CRISPS
"These snack bites are great to keep on hand for guests," says Eve McNew of St. Louis, Missouri. Since the recipe makes a lot, you might want to freeze some of the cheese logs for future use. Be sure to thaw them in the refrigerator for 2 to 3 hours before slicing and baking.

- In a large bowl, cream butter and cheese until light and fluffy. Beat in the flour, chives, salt, pepper sauce and garlic salt. Stir in cereal. Shape into four 6-1/2x1-1/2-in. logs. Wrap securely and refrigerate for 1 hour or until firm., Unwrap and cut into 1/4-in. slices. Place on ungreased baking sheets. - Make the dough. Place the flour, sugar, salt and yeast in a stand mixer fitted with the dough hook. Crack the eggs into a measuring jug and add enough warm milk to make it up to 290ml. Pour the egg mixture into the dry ingredients and mix on slow speed for 5 minutes, until the dough is smooth and elastic. With the mixer on slow, mix in a quarter of the butter, then add the rest, a quarter at a time, mixing well between each addition, to a soft, shiny dough.
- Cover the bowl and chill for 4-5 hours, until the dough is firm enough to shape. (Leave it overnight to develop more flavour, if you have time.) Cut the dough into 2 equal pieces. Lightly flour the work surface and roll out each piece to a 45 x 22cm rectangle. Sprinkle the paprika equally on top of each rectangle, then lay the slices of ham on top and sprinkle the cheese and chives over. Season with black pepper.
- Roll up each piece of dough from a long edge in a tight roll, then cut in half lengthways to give you 4 equal pieces. Take 1 piece of dough and twist it along its length, then form it into a circle and press the ends together to seal. Repeat for the remaining 3 pieces. Place the couronnes on 2 baking sheets, then transfer to a proving bag and leave to prove for 4-5 hours, until the dough is soft and puffy, and almost doubled in size.
- Heat the oven to 190°C/170°C fan/375°F/Gas 5. Brush the couronnes with the beaten egg. Bake for 20 minutes, until golden brown and cooked through. (Cover with foil after 15 minutes if they become too brown.)
