- Preheat oven to 350°F.
- In a mixing bowl, beat the butter with an electric mixer until fluffy. Add the cheese, cayenne, salt, and cereal. Mix with a spoon until incorporated.
- Drop the dough by teaspoonfuls onto an ungreased baking sheet and then flatten the dough with a fork. Bake for 10 to 15 minutes until the biscuits are set but not browned. Cool on a wire rack and serve.
CHEESE BISCUITS
I line baking sheets with parchment paper to reduce burning and sticking. For a bit more spice, add more cayenne pepper to taste. Watch biscuits during baking and remove when slightly browned for a chewy biscuit. Biscuits will keep for 2 weeks or more in an airtight container.

- 1. Add the cayenne pepper and salt to the sifted flour.
- 2. Cut the butter into the flour mix.
- 3. Work the mixture between your fingers to produce a cornmeal-like consistency.
- 4. Add the cheese and crispy rice cereal.
- 5. Continue to combine with your fingers. The more you mix, the more butter-like the dough will become and will better hold the crispies together.
- 6. Roll the dough into 1 inch balls, working in your hands to press the balls together.
- 7. Place on a cookie sheet lined with parchment paper.
- 8. Press the balls flat with a fork or the bottom of a flour covered glass.
- 9. Bake in a preheat oven at 350 for 15 minutes or until golden.
- 10. Allow to completely cool.
- 11. Store in an airtight container.

- Beat butter and cheese until blended. In another bowl, whisk flour, salt and cayenne; gradually beat into cheese mixture. Stir in Rice Krispies. If necessary, turn onto a lightly floured surface and knead 4-6 times, forming a stiff dough., Divide dough in half; shape each into a 7-in.-long roll. Wrap and refrigerate 1 hour or overnight., Preheat oven to 350°. Unwrap and cut dough crosswise into 1/4-in. slices. Place 1 in. apart on parchment-lined baking sheets. If desired, top each slice with a pecan half. Bake until edges are golden brown, 14-16 minutes. Remove from pans to wire racks to cool. To Make Ahead: Dough can be made 2 days in advance. Freeze option: Freeze wrapped logs in an airtight container. To use, unwrap frozen logs and cut into slices. Bake as directed.

- In a large bowl, combine cheese, butter or margarine, flour, crispy rice cereal, salt, Worcestershire sauce, garlic powder, cayenne pepper, and black pepper. Mix well and form small balls out of the dough (the dough will yield approximately 55 balls). Flatten each ball of dough with your fingertips until the dough is very thin and arrange the discs on a cookie sheet.

- Arrange the oven racks in the upper and lower thirds of the oven and heat the oven to 375 degrees. Line two baking sheets with parchment paper.
- In a medium bowl, stir the flour, sugar, baking powder, garlic powder, salt and paprika to combine. Add the 1/2 cup cubed butter and toss until each piece is coated completely in flour mixture. Use a pastry cutter or your hands to rub the butter into the flour, continuing to work the mixture until the butter is almost fully blended into the dough. There can still be a few larger pieces of butter, but none should be larger than a pea. If the butter feels soft or melty at any point, refrigerate the mixture in the bowl for 15 minutes before continuing.
- Stir in 1 1/2 cups/170 grams of the cheese into the flour mixture. Make a well in the center of the bowl. In a liquid measuring cup or in a small bowl with a spout, whisk the buttermilk and egg until well combined. Pour the mixture into the medium bowl and, using a wooden spoon, stir until the mixture is combined. Near the end, you may have to fold it over itself a few times in the bowl to make sure it's uniformly combined. (Resist the urge to use your hands so that the mixture doesn't get too soft or compressed.)
- Scoop the dough into 12 even portions (about 1/2 cup/80 grams each) onto the prepared sheet pan. Stagger the biscuits on the baking sheets. (You should have 6 biscuits per sheet pan.)
- Brush each biscuit with the melted butter (you won't use it all) and divide the remaining shredded cheese among the tops of the biscuits (about 2 teaspoons per biscuit).
- Transfer to the oven and bake the biscuits for 15 minutes, then brush each biscuit with butter again, and rotate the pans between the oven racks. Continue to bake until the biscuits are light golden and the cheese on top is deeply golden, 5 to 10 minutes more. The biscuits should spring back gently when touched in the center.
- Brush the finished biscuits generously with the remaining butter. Cool at least 10 minutes before serving warm (or cool completely and serve at room temperature).
