- Preheat the oven to 425 degrees F.
- If your mushrooms caps are very rounded, trim a very thin slice from the top of the caps to help them sit upright for baking. Toss the mushroom caps with the olive oil and 1/4 teaspoon salt in a large bowl.
- Heat the butter over medium-high heat. Add the chopped mushroom stems, celery and shallots and cook, stirring occasionally, until just soft, 6 to 8 minutes. Scrape into a large bowl, season with 3/4 teaspoon salt and a few grinds of pepper and set aside to cool.
- Add the bacon, goat cheese and chives to the cooled mushroom stem mixture. Stir in the breadcrumbs until well moistened.
- Pack each mushroom with an equal amount of filling and transfer the filled mushrooms to a rimmed baking sheet. Bake until the mushrooms are tender and the filling is brown and crispy on top, about 15 minutes. Let cool 5 minutes before removing from the baking sheet.

- Heat oven to 350°F. Remove stems from mushrooms; reserve caps. Chop enough stems to measure 3/4 cup. Discard remaining stems or reserve for another use. In large bowl, toss mushroom caps with vinaigrette; place stem sides down in ungreased 15x10x1-inch pan.
- Bake 10 minutes. Let stand until cool enough to handle; drain.

- Preheat oven to 375 degrees F (190 degrees C).
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Transfer bacon slices to paper towels, reserving bacon drippings in the skillet. Crumble bacon when cooled.
- Remove stems from mushrooms and set stems aside. Place mushrooms, hollow sides up, on a baking sheet; brush the insides with melted butter.

CHEESE 'N BACON STUFFED MUSHROOMS
This is a recipe from Kraft. These are soooo good! To give a little more flavor I also add finely chopped onions and I add some of the finely chop stems. I fry the onions, stems and garlic in bacon grease til onions are translucent. Remove with a slotted spoon and add to the cream cheese mixture. I drizzle any remaining bacon grease left in the pan over the mushrooms. These could also be frozen, when ready to use dip in batter and deep fry but do not fry for too long or cream cheese will come oozing out. Hope you enjoy!

- Dip all mushrooms into melted butter to coat the outside of the caps. You will have some butter left - use it later to pour into the baking pan. - Remove the stem from the mushrooms, and hollow out the cap. Reserve the mushroom stems, and cut off the woody end & discard. Dice up the remaining part of the mushroom stem & set aside along with the onion & garlic.
- Fry the bacon in a pan until crispy. Remove the bacon to a paper towel, and reserve the grease.
- Saute the diced mushroom stems, onion, & garlic for 5-7 minutes. Season with salt & pepper. Turn off the heat and add the cream cheese. Stir until melted & combined. Mix in the cheddar cheese & bacon.
- Spoon the filling into the hollowed out mushroom caps. Pack the filling in, and pile any extra on top of the mushrooms. Sprinkle with paprika.
