CHEESE POTATO & SMOKED SAUSAGE CASSEROLE
A great recipe with three of my favorites... cheese, potatoes and smoked sausage, yum! Recipe and photo found on facebook.

Steps:
- 1. Cut skinless smoked sausage in half, lengthwise, and then chop into 1/2 inch "half moon" cuts. Cook in a frying pan for about 15 minutes, turning frequently to SLIGHTLY brown.
- 2. Meanwhile, put cooked & diced potatoes in 2 quart casserole. Add cooked meat and give it a gentle toss.
- 3. Mix all remaining ingredients (except for shredded cheddar cheese & the paprika) in a saucepan over medium heat (stir constantly)until warm, melted and smooth.
- 4. Pour cheese sauce over potatoes and meat. Sprinkle shredded sharp cheddar cheese and paprika evenly over the top.
- 5. Bake in preheated 350°F oven for 35-45 minutes (watch, until golden brown on top).
JOLEAN'S CHEESE POTATO & SMOKED SAUSAGE CASSEROLE
This was another one of our favorites in the 70's Very inexpensive and very easy to make. Just recently found this recipe hand-written by my Mom, and the warm feelings flood back to me, because this was a true favorite in our house. Little did I know that she was on such a tight budget, yet made things like this that we all loved!! NOTE: The meat that was used in this recipe always varied, according to whatever we had available at the time.

- NOTE: You can substitute: 1/2 lb. hot dogs, sliced into 1/2-inch slices OR 1/2 lb. ham diced into 1/2-inch dices OR 12 oz. can of Spam diced into 1/2-inch dices, instead of the smoked sausage.

- 1. Cut sausages into half moons and fry for about 15 min, stirring often. After potatoes have been cooked, put in greased 2 qt casserole, then add cooked sausage and toss together. Mix remaining except shredded cheese and paprika, in saucepan over med heat with a whisk until melted and smooth. Stir constantly to prevent burning. Pour sauce over meat & potatoes then sprinkle with shredded cheese and paprika. Bake at 350 degrees 35-45 min or until top is golden.

- Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13-inch baking dish and oil with 1 teaspoon olive oil.
- Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until cooked through but firm to the bite, 8 minutes. Drain.
- Stir sausage, tomatoes and reserved juice, onion, Cheddar cheese, Monterey Jack cheese, 2 teaspoons olive oil, parsley, onion powder, garlic powder, salt, and ground black pepper together in a large bowl. Add elbow macaroni and stir. Pour macaroni mixture into prepared baking dish, sprinkle with American cheese, and cover with aluminum foil.
- Bake in the preheated oven for 30 minutes. Remove aluminum foil from baking dish, increase heat to 425, and bake until sauce is bubbly, and the top is golden brown, about 15 minutes. Cool for 15 minutes before serving.

- Preheat oven to 375°. Cook pasta according to package directions., Meanwhile, in a large skillet, brown sausage over medium heat 5 minutes; drain. In a large bowl, combine milk and soup. Stir in 1/2 cup onions, 1/2 cup cheese, peas and sausage. Drain pasta; stir into sausage mixture., Transfer to a greased 13x9-in. baking dish. Cover and bake until bubbly, 25-30 minutes.
