CHEESE SABLES
These crumbly, savory cookies, courtesy of Anton Edelmann, maitre chef des cuisines at the Savoy in London, are served there for afternoon tea.

Steps:
- In a medium bowl, stir together flour and cheese. Work in butter with fingertips until evenly mixed. Work in egg yolk to form a firm dough. Wrap dough in plastic wrap, and leave to rest in a cool place for about 30 minutes.
- Preheat oven to 400 degrees. On a lightly floured surface, roll dough to 1/4 inch thick. Cut out 2 1/2-inch rounds, and place on baking pan. Gather dough scraps, and roll once again. Bake until golden, about 15 minutes.

Steps:
- Cream the butter and sugar. Add egg yolk and vanilla and beat thoroughly. Combine flour and salt. Add to the butter mixture and blend until the dough is smooth. On a very lightly floured surface, shape the dough into cylinders about 1 to 2 inches in diameter. Wrap in waxed paper or plastic wrap and chill for at least an hour.
- Preheat oven to 350 degrees. Brush refrigerated logs with beaten egg and roll in crystalline sugar. With a sharp knife, slice the dough into rounds about 1/3-inch thick. Place 1-inch apart on a parchment covered baking sheet. Bake for about 10 minutes or until the cookies are slightly colored around the edges.
SAVOURY CHEESE & WALNUT SABLES FOR COCKTAILS AND PARTIES!
These delicious crisp and light little savoury biscuits/crackers are a firm favourite in our family, especially when served with the cheese board! They are also great served with soups, dips, & salads. I have used pecans instead of walnuts in the past with the same tasty results. You can omit the chilli or cayenne pepper if you are not keen on the spicy "kick" it gives! They are very nice at Christmas time if you cut them into star shapes & serve them as aperitif snacks, or with cocktails.

Steps:
- Sift the flours, salt, pepper & chillies into a bowl together & mix.
- Rub in the butter until it resembles breadcrumbs.
- Add the cheese & walnuts - mix well.
- Add the beer or milk - mix into a dough.
- Chill for 30 minutes.
- Roll out on a floured board and cut into small rounds.
- Place on a greased baking (cookie) tray and bake in pre-heated oven 180C/360F for about 15 minutes or until golden brown & crisp.
- Sprinkle with seasoning salt or Cayenne pepper if you wish.
- Cool on a wire rack and store in airtight tins.
- Serve with cheese, cream cheese & savoury fillings & dips, or just by themselves!

- Mix all the ingredients together in a mixing bowl using your hands until a dough is formed.
- Roll out the dough to a thickness of 5mm. Then use a cutter to cut out the biscuits.
- Place the biscuits onto a floured baking tray and bake in the oven for 10-15 minutes or until golden and crispy.

- Put the flour, salt, cayenne pepper, mustard powder and butter into a food processor and mix together until it resembles fine breadcrumbs. Add the grated cheeses and 1 tsp cold water, then blend briefly using the pulse button until the mixture comes together into a ball.
- Tip the ball of dough onto a lightly floured surface, divide in half and, with lightly floured hands, shape it into two 3cm thick logs. Wrap them first in squares of baking paper, then cling film and chill in the fridge for 3-4 hours until very firm.
- Preheat the oven to 180°C/fan 160°C/gas 4. Unwrap the logs, brush with the beaten egg, then roll in the chopped walnuts, pressing them on firmly by hand. Cut the logs into 4-5mm slices and place the biscuits about 3cm apart on baking trays lined with baking paper.
- Brush the tops of the biscuits very lightly with the beaten egg, then sprinkle some with the chopped rosemary and some with sea salt flakes. Bake for 11-12 minutes until richly golden brown. Remove and leave to cool on the baking trays, then store in an airtight tin.

- Sieve the flour into a bowl. Then turn the butter into the flour with your hands to create a type of crumble.
- Then add the grated cheese to the mix and keep mixing until you have a homogenous mix. You can also do this in the food processor if you prefer.
- Roll this dough then on a lightly floured surface into a thin roll about 1 ¼” in diameter. Then place this roll into the fridge in grease-proof paper for 30 minutes (or more) to cool down. Do not omit this step - it will not turn out well.
- When you are ready to make the cheese biscuits, pre-heat the oven to 190C. Then slice the roll into rounds about 3mm thick (1/8“). Do not cut them too thick.

- In a large bowl combine all of the ingredients except for the cheese and rosemary. Using your fingers, a dough cutter or a fork, work the butter into the flours until a crumbly dough forms. Add the cheese and rosemary and continue to work the dough with your hands until a ball of dough forms adding ½ a teaspoon of water if necessary to help dough come together.
- Place dough between two sheets of parchment paper and roll out to ¼ inch thick. Place in fridge or freezer and chill until firm.
- Remove dough from fridge and remove top parchment sheet. Using a cookie cutter cut chilled dough into rounds. Combine scraps by hand, place between parchment and re-roll. Continue to cut out rounds until all the dough is gone.
