Steps:
- 1. Place large cookie sheet in center of oven on rack. Preheat the oven to 400 degrees F.
- 2. In food processor, combine cheese and butter, process until mixture is smooth. Add the scallions and garlic, pulse until combined. Season with salt and pepper to taste.
- 3. Place bread cut into halves on pan that will fit on top of HOT cookie sheet. Slather an adequate amount of the cheese spread on the bread. BAKE 10-15 Minutes or until the bread is golden brown.
- 4. Cut bread into 2 inch wide slices and serve hot with your favorite dish.
NORTHWOODS INN CHEESE BREAD SPREAD
The Northwoods Inn here in California has the best cheese spread. It can be made ahead and refrigerated until you crave a recipe of gooey broiled cheese bread. The restaurant shared the recipe years ago and I want to save it safely here. I've added Parmesan to the recipe because I like the nutty flavor. I've been making it for 30 years.

Steps:
- Soften butter to room temperature and mix in all ingredients except cheese. When well mixed, fold in grated cheddar cheese and optional Parmesan, if using.
- Spread over bread and broil until bubbly - watch carefully! Cheese does not melt completely. Mixture will turn golden brown in about a minutes or so.
- I make ahead and store in refrigerator for 4 weeks. I suppose you could store it longer, but it just doesn't last past snack time at my house.
GARLIC CHEESE BREAD

- Preheat the oven to 375 degrees F.
- Mix the cheeses with the mayonnaise, 1/4 stick of the softened butter and the green onions. Add the salt and pepper to taste and set aside or keep in the fridge until you need it.
- Melt the remaining 1 stick butter in a skillet over medium-low heat and add the garlic. Cook for a couple of minutes to release the garlic flavor.
- Cut the loaf of bread in half. Brush the garlic butter over each half, making sure it's evenly distributed. Spread the cheese mixture on the loaves and bake until the cheese is hot and bubbly, about 10 minutes.
- Once out of the oven, sprinkle over the chopped parsley. Slice and serve.

- Microwave margarine in medium glass bowl for about 40 seconds or until its melted.
- Mix in all ingredients, using a fork.
- Spread the mixture over bread (I use a one of those long sourdough french loaves split in half lengthwise but I've also used plain thick cut bread or split dinner rolls).
- Place on baking sheet and bake for about 10 minutes at 450, until the top is golden brown.
- Easy!
CREAM CHEESE AND PARMESAN BREAD SPREAD
This is a great spread for bread or crackers. It goes particularly well spread on bread with any pasta meal. Serve with sliced French bread or any other bread you like. While the bread is warming, mix all the other ingredients in a bowl. Spread on warmed bread and enjoy!
