Cheesy Bacon Pretzel Dog Bites Recipes

Steps:
- Bring a pot of water to a boil. Preheat the oven to 425 degrees F. Spray a baking sheet with cooking spray and set aside.
- Roll each dinner roll into a long rope approximately 1 1/2 to 2 times the length of a hot dog. Coil each rope around a hot dog, pinching the ends to seal them so they cannot come loose.
- Add the baking soda to the boiling water, then, working in batches, drop the pretzel dogs into the water for 30 seconds and remove to a rack.
- When all the dogs have been boiled, place them on the greased baking sheet. Brush with the beaten egg and sprinkle with pretzel salt.
- Bake until the bread ropes are cooked and have turned golden brown, about 12 minutes. Serve with spicy mustard and pickles.

- Stir together the water and sugar in a large bowl. Sprinkle the yeast evenly over the top and let stand for about 5 minutes, until foamy.
- Stir the egg, butter and salt into the proofed yeast. Then stir in the 4 ¼ cups of the 1 cup at a time, continuing to stir until the dough comes together in a rough mass.
- Lightly flour a work surface and turn the dough out onto it. Knead the dough, adding more flour as needed to prevent dough from sticking to the surface, for 8 to 10 minutes, until the dough is smooth, soft, and elastic.
- Shape the dough into a ball.and place into a lightly greased mixing bowl. Cover with a clean, damp towel and place in a warm area until dough doubled in size, about 1 hour.

- First, make the dough: In a large bowl or bowl of a stand mixer, combine warm water and sugar. Sprinkle yeast on top and let sit 5 to 10 minutes until foamy.
- Add flour, salt and melted and cooled butter. Use the dough hook attachment or a wooden spoon to stir until a dough forms. Increase mixer speed to medium and knead 4 to 5 minutes until dough pulls away from the sides of the bowl and is smooth, soft and elastic; OR, transfer dough to a lightly floured surface and knead by hand 8 to 10 minutes until dough is smooth, soft and elastic.
- Shape dough into a ball; place in a lightly oiled bowl, turning once to coat. Cover bowl with plastic wrap and let dough rise in a warm place 1 to 1 ½ hours until doubled.
- Meanwhile, prepare the dogs: Slice cocktail wieners lengthwise down the center, being careful not to cut all the way through. Divide cheese slices into small pieces and place a piece or two in each slit.
