- Place the tortillas on a greased baking sheet. Combine the cheese and salsa; spread over half of each tortilla. Fold over. , Broil 4 in. from the heat for 3 minutes on each side or until golden brown. Cut into wedges.

CHICKEN AND GOAT CHEESE QUESADILLAS

- In a blender or food processor combine first 5 ingredients and blend until smooth. In a shallow nonreactive pan pour blender mixture over chicken breast half and set aside to marinate, covered and refrigerated, 4 hours. Preheat a grill or broiler. Grill or broil chicken and onions 2 to 3 minutes on each side, until chicken is just cooked through and onions are browned. Thinly slice chicken.
- Preheat oven to 400 degrees and butter an 8-inch round cake pan. In pan, layer one tortilla and sprinkle with half of chicken, onion, cheeses and basil. Top with a tortilla and sprinkle with remaining filling ingredients. Top with third tortilla and brush top with butter. Bake for 15 minutes, or until lightly browned and cheeses have melted. Let rest 5 minutes before cutting into quarters. Serve garnished sour cream and cilantro.

- Roast the chiles by using metal tongs to hold them one-by-one over the flame of your stovetop until the skin is totally charred. (If you don't have a gas stove, you can use an outdoor grill OR place them on a baking sheet directly under your oven's broiler.) When totally blackened, place the chiles in a large resealable plastic bag and seal the bag to allow them to sweat for a good 20 minutes. Then use a knife to scrape off most of the blackened skin. Stem, seed and finely mince the chiles.
- Butter a large cast-iron skillet generously and set over medium heat. Put 1 tortilla in the skillet and sprinkle on a third of the Monterey Jack and pepper jack cheese, evenly spreading it all the way to the edges so that the surface will be totally covered. Sprinkle on a third of the roasted chiles. Wait for the cheese to mostly melt, then fold half of the tortilla over itself. Cook for 20 more seconds, then flip the half-moon over and cook until the tortilla is buttery and golden, for 30 more seconds. Keep warm and repeat with the remaining tortillas, cheese and chiles. Cut into 4 or 5 wedges each and serve with bowls of chili.

- Heat a large nonstick skillet or comal over low-medium heat. Heat the tortillas slightly, flipping them over every 10 seconds, until they’re easily foldable and pliable.
- Evenly divide the cheese and sprinkle it onto one half of each tortilla. Generously season with salt.
- Cook the quesadillas for 1-2 minutes, or until one side of the quesadilla is golden-brown. You may have to press down lightly on the tops of the quesadillas with a spatula to prevent the tortillas from opening up.

- Place a large (16") cast-iron skillet over medium heat. In a large bowl, mix the pico de gallo (or salsa), cooked meat, cilantro (if using), and cheeses. Spread 1 cup of the mixture onto one half of a flour tortilla, spreading evenly and leaving ½" inch of space between the filling and the outer edge of the tortilla. Fold the other half of the tortilla over the filling and press down evenly. Repeat with the remaining tortillas.
- Pour a small amount (~1 tsp.) of olive oil onto a bunched up paper towel; lightly brush the olive oil onto the top of each quesadilla, adding more oil to the towel as needed.
- Place two quesadillas in the skillet, oiled side down. Apply olive oil (as before) to the other side of the quesadillas. Cook, covered, until golden-brown on the bottom, 2-4 minutes. Carefully flip the quesadillas and repeat on the other side. Remove the quesadillas to a cutting board and repeat with the remaining quesadillas.
