CHEESY RANCH BROCCOLI BAKE

Fresh broccoli meets a cheesy ranch sauce in this colorful side dish that'll have everyone going for seconds.

Steps:

  • Heat oven to 350°F. Spray 12x8-inch (2-quart) baking dish with cooking spray.
  • In large (at least 4-quart) microwavable glass bowl, mix broccoli, bell pepper and water; cover with plastic wrap. Microwave on High 4 to 5 minutes, stirring after 2 minutes, until broccoli is bright in color and hot; drain. Return broccoli and bell pepper to bowl.
  • Place cream cheese spread and milk in medium microwavable glass bowl. Microwave uncovered on High 1 minute; use whisk to blend (mixture will have a few small lumps).
  • Stir dressing mix into cream cheese mixture; mix well. Add cheese; stir to combine. Pour cheese mixture over broccoli and bell pepper; toss to coat. Spread in baking dish.
  • In small bowl, toss crackers with melted butter. Sprinkle over broccoli.
  • Bake 25 to 30 minutes or until hot and bubbly.

Broccoli and Cauliflower Cheese Casserole image

Steps:

  • Bring a large pot of lightly salted water to a boil. Add broccoli and cauliflower and cook uncovered until tender yet firm to the bite, 2 to 3 minutes. Drain in a colander and immediately immerse in ice water for several minutes to stop the cooking process. Drain and transfer broccoli-cauliflower to a baking dish.
  • Melt butter in a saucepan over medium heat; add flour and stir until browned and bubbling, 3 to 4 minutes. Whisk half-and-half and Dijon mustard into butter-flour mixture; bring to a boil, reduce heat to medium-low, and simmer until cream sauce is thickened, about 2 minutes.
  • Stir 2/3 cup Cheddar cheese, Parmesan cheese, and paprika into cream sauce; cook and stir until cheeses are melted. Season sauce with salt and pepper. Pour sauce over broccoli-cauliflower mixture and top with 3 tablespoons Cheddar cheese and bread crumbs.
  • Bake in the preheated oven until topping is lightly browned, 15 to 20 minutes.

  • Thaw the cauliflower and broccoli. Preheat oven to 350. I like my veggies softer so I steam them in the microwave for about 5 minutes first (just place them in a bowl with a little water and cover, then microwave). Place butter in the bottom of a 9x13 baking pan and let melt in oven. Place the vegetables in the baking dish and sprinkle with the ranch seasoning. Cover with the cheese and bake 10-15 minute or until the cheese is completely melted. Very easy, simple and a good way to flavor the veggies for my low carbers out there.
