QUICK-ROASTED SALSA

Steps:
- Preheat the oven to 450 degrees F.
- Place the tomatoes, garlic, onion, jalapeno and poblano onto a baking sheet. Drizzle with the olive oil and season with salt and pepper. Roast until charred in spots, about 15 minutes. Set aside and allow to cool slightly, about 5 minutes.
- Transfer the roasted vegetables to a blender. Add the lime zest and juice and puree until smooth, being careful not to fill the blender too full. Transfer to a bowl and stir in the cilantro. Taste and adjust the seasoning if needed. Goes great with chips or alongside enchiladas.

- 1. Preheat oven to 350 degrees. Spray a 9x13 cake dish with cooking spray. (I used a disposable aluminum pan, but I doubled them-nested two and baked them on a baking sheet for stability. This way, I don't have to worry about retrieving a dirty cake dish to bring home.
- 2. Spread chicken pieces evenly in bottom of cake dish.
- 3. Pour salsa over chicken.
- 4. Bake uncovered about 20 minutes. Check for doneness. When chicken is done, remove dish from oven and sprinkle cheese over top of salsa. Sprinkle green onion over cheese, reserving a little for garnish.
- 5. Return to oven and bake until cheese is melted and bubbly.
- 6. Top with dollops of sour cream just before serving, if desired, and a sprinkle of fresh chopped green onion for color.

Someone gave me this recipe a few years back and it's become a household favorite. You can use mild, medium or hot salsa depending on your taste. I usually serve it with Spanish rice and Mexican-style canned corn. Very easy and quick!

- Preheat oven to 375 degrees F (190 degrees C)
- Place chicken breasts in a lightly greased 9x13 inch baking dish. Sprinkle taco seasoning on both sides of chicken breasts, and pour salsa over all.
