CHEESY SLOPPY JOSE TACO CUPS

Patricia A. Harmon, PA, devised these kid-pleasing biscuit dough cups with a beef filling and Mexican toppings. Winner of the 2003 National Beef Cook-Off - Handheld Kid Pleasers.

Cheesy Sloppy Jose Taco Cups image

Steps:

  • Heat oven to 350 degrees F. Separate biscuits and press each into a 3-1/2-inch circle. Place over the underside of muffin cups from a standard-size muffin pan, pressing around cup to shape into bowl. Bake in 350 degrees F oven 12 to 15 minutes or until browned. Remove baked cups to platter.
  • Meanwhile combine taco sauce with ground beef and sloppy Joe sauce in medium saucepan; cook over medium heat 6 to 8 minutes or until hot and bubbly, stirring occasionally. Stir in 3/4 cup cheese.
  • Spoon beef mixture evenly into cups. Top evenly with lettuce, tomato and 1/4 cup cheese. Top with sour cream and olives.

1 (20 ounce) container refrigerated fully-cooked taco sauce with seasoned ground beef
1 (17.3 ounce) package refrigerated grand corn or buttermilk biscuit dough
½ cup canned sloppy Joe sauce
¾ cup shredded Mexican four-cheese blend
1 ½ cups thinly sliced lettuce
½ cup chopped tomato
¼ cup shredded Mexican four-cheese blend
½ cup dairy sour cream
¼ cup sliced ripe olives

SLOPPY JOE TACO CUPS

I haven't made these as yet, it looks so good, I can't wait to try it! Since I have not made this as yet, I am not sure how many biscuits are in the refrigerated buttermilk biscuits dough package, or also the correct size of the package, so I really cannot say what the correct yield would be as yet, I am only estimating 8 biscuits for this and 8 ounce for the weight, correct me if I am wrong! You might want to try my recipe#76616 for this :)

Sloppy Joe Taco Cups image

Steps:

  • Set oven to 350 degrees.
  • Separate the biscuits and press into a 3-1/2-inch circle.
  • Place over the UNDERSIDE of a standard-side muffin tin, pressing around the cup to shape into a "bowl".
  • Bake for 12-15 minutes or until browned.
  • Remove and place baked cups on a serving platter.
  • In a skillet brown the beef with onions, garlic and green pepper until browned; season with salt and pepper.
  • Add in taco seasoning, water and sloppy Joe sauce; simmer for 6-7 minutes or until hot and bubbly, stirring occasionally.
  • Stir in 1 cup cheese; mix until combined.
  • Spoon the cooked beef/cheese mixture evenly between the baked "cups".
  • Top with lettuce, tomato and more shredded cheese.
  • Top with sour cream and sliced olives.
