SPINACH AND CHEESE STUFFED PASTA SHELLS

Magnificent jumbo pasta shells stuffed to bursting with cheesy spinach filling.

Spinach and Cheese Stuffed Pasta Shells image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of salted water to boil, gently place pasta shells in boiling water; bring water back to boil. Cook until noodles are just tender; drain well.
  • Squeeze spinach dry. Combine spinach, ricotta, 1/3 cup Parmesan cheese, fennel, basil and garlic in a large mixing bowl. Season with salt and pepper; mix well.
  • Spread 1/2 cup marinara sauce evenly over the bottom of a 9x13 inch baking dish.
  • Fill each pasta shell with the spinach cheese mixture. Arrange the shells, filling side up in the baking dish. Spoon remaining marinara sauce over the shells. Sprinkle remaining Parmesan cheese on top of the shells.
  • Cover the pan loosely with aluminum foil and bake in preheated oven until heated through; about 30 minutes.

Steps:

  • Prepare macaroni shells according to package directions; drain and set aside.
  • Cook ground beef, onion, and garlic in a large skillet until beef is browned.
  • Drain excess fat.
  • Stir in next 6 ingredients.
  • Set aside.
  • Combine spaghetti sauce and wine.
  • Spoon one-fourth of sauce into a lightly greased oblong baking pan; set aside remaining sauce.
  • Stuff macaroni shells with beef mixture, and place in baking dish.
  • Spoon remaining sauce over shells.
  • Sprinkle Parmesan cheese over shells.
  • Bake, uncovered, at 400 degrees for 20 minutes.

18 jumbo pasta shells
1 lb ground beef
1 medium onion, chopped
2 garlic cloves, minced
2 cups shredded mozzarella cheese
1/2 cup Italian style breadcrumbs
1/4 cup chopped parsley

1/4 cup Burgundy wine or 1/4 cup dry red wine

Okay it's not a great name, but I don't know what else to call it. Pasta tubes filled with ricotta, mozzarella, and veggies in tomato sauce. We made it two nights in a row. It's nothing special, but it's perfect for chilly New England evenings.

Steps:

  • Bring a large pot of salted water to a rolling boil. Add lasagna noodles and cook for about 3/4 of the time package or 7 minutes. Drain and set aside to cool.
  • Melt butter in a large frying-pan over medium heat. Add mushrooms and spinach and cook, stirring occasionally, until mushrooms are brown. Drain to remove excess water and put in mixing bowl. Add basil, parsley, paprika, ricotta, mozzarella and salt, pepper, and red pepper flakes to taste. Mix well.
  • Lay a noodle flat on a cutting board and cut in half. Scoop some cheese and vegetable mixture along the edge on one end of noodle. Roll noodle up. Touch up ends by adding more mixture with piping bag or small spoon. Repeat with remaining noodles.
  • Pour tomato sauce and 2 cups water into thick-bottomed soup pan with tight-fitting lid. Place stuffed noodles in a single layer in sauce. More than one batch may be necessary. Bring to a simmer and cook covered, stirring occasionally, until done, about 20 minutes.

Steps:

  • Preheat oven to 350°F. Cook pasta and remove from heat 1 minute before suggested cook time; drain and set aside. Cook and stir sausage in large skillet over medium-high heat 8 to 10 minutes or until thoroughly cooked. Drain and return to skillet. Stir in sauce, Italian seasoning, salt and cooked pasta. Layer half of pasta mixture in a greased 13x9-inch baking dish. Mix ricotta and 1 cup of mozzarella and Parmesan cheese. Spread over pasta. Top with remaining pasta and mozzarella cheese. Sprinkle with parsley. Bake for 30 minutes or until hot and cheese is melted.

  • Bring a large pot of lightly salted water to a boil. Add shells and cook for 8 to 10 minutes or until al dente; drain and rinse in cold water.
  • Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain and crumble. In a large bowl, combine cooked sausage, spinach, ricotta cheese, egg, garlic, lemon juice and Parmesan cheese. Season with salt, pepper and oregano.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Stuff pasta shells with the sausage and cheese mixture and place in a 9x13 inch baking dish. Top with spaghetti sauce and mozzarella cheese.
