Cheesy Taco Meatloaf Recipes

Steps:

• Preheat the oven to 350 degrees F (175 degrees C).
• Thoroughly combine beef, tortilla chips, pepper Jack cheese, onion, and taco seasoning in a bowl.
• Whisk eggs, milk, and taco sauce together in a separate bowl. Add to meat mixture and stir until well combined.
• Press mixture into a 9x5-inch loaf pan and top with a strip of taco sauce down the center.
• Bake in the preheated oven until cooked through and browned on top, 45 to 60 minutes.

Steps:

• In a large bowl, combine the first eight ingredients. Crumble beef over mixture and mix well. Press into a greased 9x5-in. loaf pan. , Bake, uncovered, at 350° for 1-1/2 hours or until no pink remains and a thermometer reads 160°. Serve with salsa, sour cream, cheese and olives if desired.

Steps:

• 1. Preheat oven to 400 degrees.
• 2. Combine ground beef, onion, crackers, taco seasoning, salt & pepper with 1 cup cheese and 1/2 cup salsa. Mix it up as you would a meatloaf.
• 3. Divide meat mixture into 12 equal pieces. Press in to 12 muffin cups that have been sprayed with a cooking oil such as PAM. Make an intention on each piece with the back of a spoon.
• 4. Bake 25 to 30 minutes or until meatloaves are done. Top with remaining salsa and cheese; bake an additonal 5 minutes or until cheese is melted.
• 5. Serve with spanish rice, pinto beans and a slice of cornbread.

Steps:

• In a large bowl, Thoroughly mix together the ground beef, garlic powder, taco seasoning mix, 2/3 cup of picante sauce, crushed tortillas, and 3/4 cup of cheese. Place mixture into a loaf pan.
• Bake at 350 degrees for 1 hour, or until thoroughly done.
• Sprinkle the meatloaf with remaining cheese and bake another 5 minutes, or until cheese is melted. In a 1 qt. sauce pan, over med. heat bring remaining picante sauce to a boil. Serve over meatloaf.
