CHEESY QUESADILLAS

We serve these quesadillas as chili dippers or load them up with salsa and sour cream for a super starter. -Terri Keeney, Greeley, Colorado

Steps:

  • Place the tortillas on a greased baking sheet. Combine the cheese and salsa; spread over half of each tortilla. Fold over. , Broil 4 in. from the heat for 3 minutes on each side or until golden brown. Cut into wedges.

This is just a little concoction that I made yesterday that was delicious. I didn't want to forget it, so I'm posting it here. It makes a quick, easy, and (mostly) healthy snack, lunch, or light dinner.

Turkey & Cheese Quesadilla image

Steps:

  • Place tortilla in a warm skillet. Add cheeses to whole tortilla, within 1/2" of edge. Melt cheese over medium heat.
  • Add slices of turkey to the center of the tortilla, staggering on top of one another.
  • Cook another couple of minutes until turkey is warm. (Careful not to burn the bottom of the tortilla). Tortilla should be pretty stiff and crispy. Turn off heat.
  • Carefully spread miracle whip onto one side of the tortilla. Add lettuce and tomato slices on top of miracle whip.
  • Fold tortilla in half and press lightly with a spatula. Remove from skillet onto a plate and enjoy hot with soup or chips.

Steps:

  • Spread 1 tablespoons bean dip onto one side of 3 of the tortillas.
  • Layer the three left over tortillas with the turkey and cheese.
  • Place the tortillas with the bean dip on top of the turkey and cheese, beans side down.
  • Spray 12 inch skillet with cooking spray and heat over medium heat until pan is hot.
  • Place one of the quesadillas in the skillet and spray top of tortilla lightly with cooking spray.
  • Cook for 4-8 minutes, turning once, until golden and cheese is melted.
  • Repeat with remaining quesadillas.

CHEESY TURKEY BURGER QUESADILLAS

This was a very tasty crispy healthier burger. Add other toppings (bacon, tomatoes, mushrooms, olives... etc) if desired but keep in mind whatever you add needs to be added before going in oven. Once baked, it will be hard to lift top shell from the melted cheese. Enjoy

Cheesy Turkey Burger Quesadillas image

Steps:

  • Preheat oven to 350 degrees.
  • Heat oil in large skillet over medium heat; add onions and Sauté until tender.
  • Add ground turkey, cook until completely cooked; add salt and pepper to taste, red pepper flakes (if desired), garlic powder, ketchup, Worcestershire sauce and crushed bouillon . Stir all ingredients together and simmer for about 10 minutes.
  • Remove from heat and drain any oil and blot any excess oil with paper towels.
  • Lightly brush one side of each of the 4 tortilla shells and lay 2 shells oiled side down on baking sheet. Top each with 1/2 of the meat mixture; spread evenly over tortilla shell. Add jalapeno slices (if desired) and cheese. Top each with the other 2 shells oil side up.
  • Bake in preheated oven for 12 to 15 minutes until shells are lightly browned and crisp and cheese is melted.
  • Remove from oven; cool for about 5 minutes. Using knife or pizza cutter, cut into 4 triangles and serve.

  • In a large nonstick skillet, cook the turkey, onion and garlic over medium heat until meat is no longer pink; drain. Add zucchini, salsa, corn, red pepper and chilies.   • Meanwhile, heat olive oil in a large non-stick frying pan over medium heat. Add onion and cook, stirring often, until softened, about 3 to 5 minutes. Add ground turkey and break up any larger pieces into crumbles (smaller pieces). Add bell pepper, beans, corn, taco seasoning and chipotle chili pepper, stirring to combine everything. Cook, stirring occasionally, until turkey is fully cooked through, about 10 to 12 minutes. Stir in tomato paste and broth and cook 1 to 2 minutes.
