CHERRY GELATIN SUPREME

- In a large saucepan, bring 1 cup water to a boil. Stir in cherry gelatin until dissolved. Stir in pie filling. Pour into an 11x7-in. dish. Cover and refrigerate for 2 hours or until set., In a small saucepan, bring remaining water to a boil. Stir in lemon gelatin until dissolved. In a small bowl, beat the cream cheese and mayonnaise until smooth. Beat in lemon gelatin and pineapple. Cover and refrigerate for 45 minutes. , Fold in the marshmallows and whipped cream. Spoon over cherry layer; sprinkle with pecans. Cover and refrigerate for 2 hours or until set.

PATRIOTIC GELATIN FRUIT SALAD
What a patriotic dessert! It's so impressive when complete, you can use it as part of the table decoration for a celebration. There are a few steps to this recipe, but the end result is delicious. Steps:
- 1. The day before making the fruit gelatin, put the frozen whipped topping in the refrigerator to thaw. Also, put the cherry pie filling and the trifle bowl in the refrigerator to chill.
- 2. An hour before making the recipe, set the cream cheese out on the counter to reach room temperature.
- 3. Make the blueberry gelatin as directed on the package except use 2 cups of boiling water and only 1 cup of cold water. Place the mixture in the refrigerator.
- 4. Save a few blueberries for garnish. When the blueberry gelatin just beginning to congeal (consistency of egg white), stir in the rest of the fresh blueberries. Pour the blueberry mixture into the trifle bowl. Place it in the refrigerator to set.
- 5. In the bowl of your stand mixer beat the cream cheese until fluffy. Turn the mixer to low speed and gently add 8 ounces of frozen whipped topping. Don't over mix. Add the powdered sugar and lemon juice.
- 6. Scoop the mixture into the trifle bowl on top of the blueberry layer when it has set. Refrigerate until firm.
- 7. Once the cream cheese layer is firm, begin making the next layer.
- 8. Make the strawberry gelatin using 2 cups of boiling water and only 1 cup of cold water. Chill until it begins to congeal. Then, stir in all the contents of the cherry pie filling.
- 9. Gently pour this mixture on top of the cream cheese layer.
- 10. Once the cherry/strawberry layer is firm, top it with the rest of the whipped topping. Garnish with the reserved blueberries. Keep cold until serving. Cherries and strawberries would also be excellent garnish!
- 11. This recipe is good for 2-3 days in the refrigerator. It is a good idea to make it the day ahead of service.

- In large bowl, dissolve gelatin in boiling water, stirring constantly. Stir in frozen cherries until thawed. Stir in pineapple.
- Into ungreased 8 inch square glass baking dish, pour about half of the gelatin mixture. Refrigerate 30 to 45 minutes or until set.
- Drop cream cheese by small spoonfuls over set gelatin mixture; carefully spread to cover. Pour remaining gelatin mixture over top.
- Refrigerate at least 2 hours until set.
- Cut into squares.
- Serve on lettuce leaves.

- Dissolve gelatin completely in 2 cups hot water and pour into desired mold. Mix crushed pineapple, bananas, and 1 1/2 cup cold water into gelatin mixture; top with miniature marshmallows. Chill until firm.
- Whisk reserved pineapple juice, sugar, flour, and egg in a saucepan over low heat and cook, whisking constantly, until mixture almost comes to a simmer and becomes thick, about 5 minutes. Mix cream cheese into sauce, transfer to a large bowl, and cool to room temperature. Stir whipped topping into cream cheese mixture. Spread over gelatin. Chill thoroughly before serving.

BING CHERRY SALAD
This is a salad my great grandma use to make and is one of my favorites to eat during the holiday season. Most people make this creamy by melting the cream cheese or dissolving it in the juice. We actually add small chunks of the cheese after the mix has cooled. So you have a clear gelatin with little white chunks in it. So good!

- Drain the pineapple juice and cherry water into a 2-cup measuring cup. Pour enough color to make 2 cups; discard the remaining soda. Pour the cola mixture into a saucepan.
- Bring the cola mixture to a boil over medium-high heat. Remove from heat, then stir in the pineapple, cherries, cream cheese, and cherry gelatin until gelatin dissolves, about 5 minutes. Pour mixture into a mold or glass baking dish. Refrigerate until set, about 3 hours.

GRANDMA MAX'S LAYERED JELLO SALAD
This is one of my favourite memories from going to my Grandma's house. She would make this every Thanksgiving and Christmas holiday and there were hardly any leftovers. My Grandma passed away in 2003 and now her recipe has become a staple in my house during those occasions. I hope you enjoy it has much as my family does!

- Prepare the cherry jello powder according to the directions on the package in a glass mixing bowl. Put it in the fridge and let it set.
- Once set, prepare the dream whip according to the package and cut the cream cheese into small chunks, (if you're not a fan of chunks, you could whip it all together). Mix the cream cheese into the dream whip and layer it on top of the cherry jello. Let it set in the fridge.
- *You could save yourself time if you do step 1 and step 2 together and let both set in the fridge at the same time.*.
- Drain the crushed pineapple and rinse with cold water approximately 3-4 times to remove most of the acidic juice. Make sure to squeeze out the excess water with your hands.
- Make the lemon jello powder according to directions and let it partially set.
- Mix the pineapple into the lemon jello and layer over top of the dream whip mixture.
- Let set in the fridge and serve. (For the best results, put saran wrap over the salad and let it set overnight).
- Note: The dream whip should be one of the small envelopes.
