CHOCOLATE CHERRY TRUFFLES
My cherry truffles were the delicious result of a kitchen experiment involving a bottle of kirsch I'd received as a gift and some dried cherries I had on hand. They won a blue ribbon at the Wisconsin State Fair! -Gerry Cofta, Milwaukee, Wisconsin

CHERRY POM POMS (TRUFFLES)
These are an essential for the truffle plate at Christmas. They take minutes to make and look great. Dipping in dark chocolate and then drizzling white chocolate over the top looks divine. You could also use red/green sprinkles for that festive touch.

A PARTRIDGE IN A CHOCOLATE TRUFFLE TREE!
This is such a wonderful way of serving your chocolate truffles at Christmas or New Year - or indeed any special winter festival! I do make my own truffles for this, but you can buy ready-made truffles for ease and speed of course! I love to see my family and friend's faces when I bring the coffee and "chocolates" out with this Truffle Tree! Allow yourself plenty of time to assemble this, the plant pot and the tree "trunk" can be prepared beforehand; once the chocolate truffle tree has been assembled, it will be fine for up to 2 days before you need to serve it, stored in a very cool and dry place - NOT a fridge however. I have made this with a well-known gold wrapped chocolate nut truffle before, as well as the white chocolate and coconut version by the same company! The truffles shown in my photos are local hand-made truffles, but any "firm" high chocolate truffle is fine. I have my own truffle recipe posted on zaar, Recipe #271012 which also works very well with this tree! Have fun - and just watch your guest's faces when you bring this out!! NB: You can also make this with marshmallows and other suitable sweets or candy, especially for children.

Yield 1 Chocolate Truffle Tree, 12-18 serving(s)

Steps:
- Spray the "trunk" of the tree with a colour of your choice such as gold or silver.
- Spray the plant pot the same colour, allow them to dry for at least 4 hours.
- Cover the foam ball with aluminium foil and wrap securely around, taping if necessary.
- Place some pebbles in the bottom of the plant pot and then push the florist's foam in, on top of the pebbles - wedging it in so that it is firm.
- Stick the "trunk" into the foil-covered ball - firmly - then push the other end of the "trunk" into the florist's foam in the prepared plant pot. Make sure it is firm and does not rock, add some more pebbles.
- Tie a ribbon around the top of the "trunk" at the base of the foil-covered ball - then tie a large bow.
- Take a cocktail stick and push it into your truffle, (or other sweets/candy) then push the other end into the foam ball making sure it is securely positioned.
- Do this for all the chocolate truffles until the "tree" is full.
- Add some white foam packing balls around the top of the plant pot to resemble snow - brush off any loose cocoa and serve with coffee!
- Don't forget to pin your Partridge nearby! My Partridge is a glass bird, that was a gift from JoyfulCook!

EASIEST CHOCOLATE TRUFFLES
Not an "authentic" Swiss truffle in that it lacks fresh cream, but a very easy and inexpensive treat that even small children would enjoy making with adult supervision. Plan for four hours refrigeration time. Recipe adapted from Extending The Table: A World Community Cookbook (1991) and submitted for Zaar World Tour II.

Steps:
- Melt and stir together chocolate chips and milk in a double boiler over low heat (or use your microwave); add butter and stir briefly until it is melted; remove from heat; cover and refrigerate four hours or overnight.
- Form chocolate mixture into small balls using a teaspoon and your fingers; the mixture will seem stiff at first but the heat from your fingers will soften it.
- Roll truffles in your choice of cocoa powder, chopped nuts (hazelnuts would be a good choice as they are popular in Switzerland), powdered sugar, finely shredded coconut, chocolate sprinkles, or in melted and slightly cooled milk chocolate or white chocolate.
- Store truffles in the refrigerator for up to one week.

SUPER EASY CHOCOLATE TRUFFLES
This is a wonderful truffle recipe: It's very quick to put together and still tastes like a ton of work went into it. It can be easily varied by subbing any other alcohol or flavoured-syrup for the rum.

Steps:
- Take 125g of the chocolate and grate it finely (Use a piece of paper to hold the chocolate so that it doesnt melt under your fingers). Chop the remaining 25g into small pieces.
- Cream the butter (I used a spoon, but you may also use a hand-mixer). In portions add the grated and chopped chocolate as well as the chocolate/cocoa powder and the rum.
- Form balls (about the size of a hazelnut) out of the mass (wash your hands with cold water if they get too warm to form the balls without melting all the chocolate) and roll them in your desired garnish (see above).
- Place in candy wrappers and store in a box in a cool place (these will keep for up to 8 days).
