CHICKEN-SPINACH CALZONES

Chicken-Spinach Calzones image

Steps:

  • Preheat the oven to 450˚. Line a baking sheet with parchment paper. Combine the chicken, mozzarella, spinach, roasted red peppers, 1/2 teaspoon salt and a few grinds of pepper in a large bowl.
  • Divide the pizza dough into 4 pieces; keep covered with plastic wrap until ready to use. Working with 1 piece at a time, roll the dough into a ball and dust with flour, then roll into a 7-inch round on a lightly floured surface. Spoon one-quarter of the chicken mixture on one side of the dough round, then fold the dough over the filling and crimp the edges with a fork to seal. Transfer to the prepared baking sheet. Repeat with the remaining dough and filling.
  • Brush the calzones with the beaten egg and make a few slits in the top of each with a paring knife. Bake until the calzones are golden and puffed, about 25 minutes. Let rest 5 minutes. Serve with marinara sauce.

1 1/2 cups shredded roast chicken
1 1/2 cups shredded mozzarella cheese
1 10-ounce package frozen chopped spinach, thawed and squeezed dry
1/2 cup chopped roasted red peppers, drained
Kosher salt and freshly ground pepper
1 pound refrigerated pizza dough, at room temperature
All-purpose flour, for dusting
1 large egg, lightly beaten
Warm marinara sauce, for serving

This recipe can be easily doubled. This freezes wonderfully and makes a great meal/snack to have on hand. You can also make these and eat them hot out of the oven. This recipe was created for Ready, Set, Cook! #6

Barbecue Chicken Basil Calzones (Oamc) image

Steps:

  • For the dough: Combine flour, baking powder, sugar and basil.
  • Add milk powder to water and stir until dissolved, add to dry mixture.
  • Add eggs and melted butter and mix well.
  • Set aside while making the filling.
  • For the filling: Cook onions in butter over medium heat until onions are tender.
  • Add chicken and mushroom pieces and cook 2 minutes.
  • Remove from heat and stir in barbecue sauce and cheese.
  • Divide dough into 4 pieces and roll out into 8 inch circles.
  • Place 3/4 cup - 1 cup of filling in each circle.
  • Fold dough in half and seal edges tightly.
  • Bake at 350°F for 15-20 minutes or until top begins to brown slightly.
  • For OAMC: Cool and freeze at this point.
  • Defrost in the oven or microwave before serving.
  • Serve warm with extra barbecue sauce to dip if desired.

The original recipe was a bit bland so I add italian seasoning to the pizza sauce. Keep the pizza dough cold until you use it or it is difficult to work with.

Steps:

  • Preheat oven to 425 degrees.
  • Heat a large nonstick skillet over medium-high heat. Spray with cooking spray. Add garlic and chicken to pan and saute for 5 minutes or until chicken is no longer pink.
  • Stir in pizza sauce, italian seasoning, and red pepper. Reduce heat and simmer 5 minutes, stirring occasionally. Remove from heat and stir in basil. Let sit for 10 minute.
  • Unroll pizza dough onto a baking sheet coated with cooking spray. Cut into quarters and pat each into an 8x6" rectangle. Divide chicken mixture evenly onto the rectangles and sprinkle with 2 tbsp of cheese on each.
  • Fold each rectangle in half over the chicken and pinch the edges to seal.
  • Bake for 12 minutes or until golden brown.

Steps:

  • Cook broccoli according to package directions; drain. Sprinkle with sage; set aside. In a large saucepan, saute onion in oil until tender. Add garlic; cook 1 minute longer. Remove from the heat. Stir in the broccoli, chicken, cheese, basil and raisins; set aside., On a lightly floured surface, divide dough into four pieces. Roll each piece into a 10-in. circle. Carefully place one circle on a lightly greased baking sheet. Spoon a fourth of the chicken mixture onto half of the circle. Brush edges of dough with water; fold dough over filling and pinch edges to seal. Repeat with remaining dough and filling. , With a sharp knife, make two slashes on each calzone. Beat egg and water; brush over calzones. Bake at 400° for 18-22 minutes or until golden brown.

  • In a medium-sized bowl, combine the ricotta, shredded parmesan cheese, basil, rosemary and 2 tsps of the Italian seasoning. Lightly season with salt and pepper. Set aside.
  • Cut out circles (size is your preference). Ours were about 7 inches. Depending on the size of your cut-outs there should be about 8 circles.
