CHICKEN AND ASPARAGUS BUNDLES
My husband is a big asparagus fan, so I had to try this recipe. It's a mainstay when I want something unusual but simple for guests. For variety, you can leave off the sauce and serve the bundles chilled for lunch. -Donna Lohnes of Wooster, Ohio

- Flatten chicken breasts to 1/2-inch. Wrap each around five asparagus spears; secure with toothpicks. Place in a 13-in. x 9-in. baking dish coated with cooking spray. Combine the oil, lemon juice and seasonings; pour over bundles. Cover asparagus tips with foil., Cover and bake at 350° for 15 minutes. Uncover; sprinkle with the onions. Bake 12-15 minutes longer or until chicken is no longer pink and asparagus is crisp-tender. Remove bundles to a serving platter and keep warm., In a small saucepan, combine cornstarch and broth until smooth; stir in pan juices. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove toothpicks. Serve with sauce.

Steps:
- Place asparagus spears in a resealable plastic bag.
- Whisk olive oil, vinegar, and mustard in a bowl. Pour over asparagus in the bag and distribute evenly. Marinate for 1 hour.
- Preheat the oven to 400 degrees F (200 degrees C).
- Divide asparagus into bundles of 3 stalks each. Cut prosciutto slices in half lengthwise and lay on a cutting board. Wrap a piece of prosciutto around each bundle to create 7 or 8 bundles. Place bundles in a 9x13-inch baking dish.
- Bake in the preheated oven until asparagus is tender, 14 to 16 minutes.
- Remove dish from oven and set oven to broil. Place 1 slice of Brie cheese on top of each bundle and sprinkle with crushed walnuts. Return to the oven and broil until cheese begins to melt, about 1 minute.

- Preheat oven to 350 degrees F (175 degrees C).
- Place asparagus in a steamer over 1 inch of boiling water, and cover. Cook until tender but still crisp, about 2 to 6 minutes. Drain and place in a shallow baking dish.
- Lay cheese slices over asparagus. In a small bowl combine melted butter, bread crumbs and sesame seeds. Sprinkle over cheese.
- Bake in preheated oven for 8 minutes.
- Increase oven to broil. Broil just until breadcrumbs are golden brown.

- Fry chicken in a pan until browned on both sides.
- Drain on paper towel.
- Take two sheets of filo for each piece of chicken, fold the two pieces which are together, in half& spray with oil.
- Place a chicken fillet on each pastry sheet& top with even amounts of asparagus then brie.
- Fold pastry into a parcel, brush edges with water to seal.
- Place the parcels on greased oven trays& bake in a moderate oven (180c) for 10- 15 minutes or until browned.

- Preheat the oven to 400 degrees F (200 degrees C).
- Pour the beer or wine into a glass baking dish large enough to lay out the chicken. Season the chicken with salt, pepper and oregano on both sides, and place in the dish.
- Bake for 35 to 40 minutes in the preheated oven, or until juices run clear. While chicken is baking, slice Brie with the rind into 1/4 inch thick slices. I saw the asparagus in the produce section today and decided to come up with a recipe for dinner tonight. This is what I came up with - both DH and myslef loved it. Easy enough for any day, but "fancy" enough for a dinner party. I served these with fingerling potatoes roasted with olive oil and rosemary.

- Steam asparagus for 3-4 minutes until barely crisp-tender.
- Place chicken breasts between plastic wrap, and gently pound to 1/4 inch thickness (I have the butcher do this part for me to save time).
- Place 4 or 5 asparagus spears horizontally across each piece of chicken; roll up to enclose asparagus and secure with red pepper ring.
- Place chicken, seam-side down, in 9 x 13 baking dish.
- Brush chicken lightly with olive oil and sprinkle with italian seasoning, salt, and pepper.
- Bake in 375F oven for 25-30 minutes or until chicken is cooked through.
CHICKEN AND BRIE BUNDLES WITH ASPARAGUS ALMONDINE
This is so easy to prepare, yet the presentation is wonderful. My DH loved this and hes not too keen on chicken. Very easy to prepare for a special occasion as you can make the bundles in advance, and then pop in the oven half an hour before serving. I served with asparagus almondine. Adopted from a Rachel Ray recipe.

- Preheat oven to 375 *F.
- Cook the asparagus in boiling water for 5 mins, until just tender, drain and put in ice water to stop cooking. Drain and pat dry.
- Season the chicken breasts with the salt, pepper, thyme and lemon zest.
- In a skillet heat the olive oil and saute the chicken breasts for 5 mins a side until golden. remove from pan.
- To the same skillet add the butter and the mushrooms and cook for 5 mins until slightly brown and tender. Add the sherry and dijon mustard and simmer for 5 minutes Add the cream and season with salt and pepper, simmer for a furthur 2 minutes Remove from heat.
- Roll the puff pastry sheet out on a floured surface and cut into 2 large squares ( 8 " X 8" ).
- In a small bowl mix the egg and water together and brush the edges of the 2 pastry squares with the egg mix.
- Place 3 slices of brie in the middle of each puff pastry sheet, and top with a chicken breast.
- Spoon the mushroom mixture over the top of the chicken.
- Now fold up the pastry, pinching the edges together to seal.
- Place the bundles seam side down on a greased baking sheet, and brush with the remaining egg mix.
- Using any leftover pastry pieces cut out heart shapes and place on top of the bundles, brushing with more of the egg mix.
- Bake in the oven for 30 mins until the pastry is golden brown.
- Meanwhile, add 2 tbsps butter to a skillet and toss the asparagus and almonds together and saute for 5 mins, until the almonds are golden brown.
- Serve with the bundles.
