CHICKEN NOODLE CASSEROLE I
Creamy chicken and noodle casserole topped with crushed crackers. Wonderful as leftovers topped with melted cheese!

Steps:
- Poach chicken in a large pot of simmering water. Cook until no longer pink in center, about 12 minutes. Remove from pot and set aside. Bring chicken cooking water to a boil and cook pasta in it. Drain. Cut chicken into small pieces, and mix with noodles.
- In a separate bowl, mix together mushroom soup, chicken soup, and sour cream. Season with salt and pepper. Gently stir together cream soup mixture with the chicken mixture. Place in a 2 quart baking dish.
- Melt butter in a small saucepan, and remove from heat. Stir in crumbled crackers. Top casserole with the buttery crackers.
- Bake at 350 degrees F (175 degrees C) for about 30 minutes, until heated through and browned on top.

Steps:
- In a large bowl, combine the soup, mayonnaise and lemon juice. Stir in the chicken, onion, peppers, 1/2 cup Monterey Jack cheese and 1/2 cup cheddar cheese. Add noodles and toss to coat. , Transfer to a greased 2-qt. baking dish. Bake, uncovered, at 350° for 30-35 minutes. Sprinkle with remaining cheeses. Bake until cheese is melted, about 10 minutes longer. , Freeze option: Sprinkle remaining cheeses over unbaked casserole. Cover and freeze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.

A great, easy alternative to making green chicken enchiladas. You can make them spicier by sprinkling verde sauce over the top before baking. You can also add black beans or chopped tomatoes to add a little flair.

- Cook chicken in salted water for 25-30 minutes or until tender; Remove chicken and reserve stock.
- Cut chicken meat into bite-size pieces; set aside.
- Cook noodles in stock until tender; drain and set aside.
- Saute green pepper, onion, and celery in 1/4 cup butter until tender.
- Add cheese; cook, stirring constantly, until cheese melts.
- Stir in soup and mushrooms; cook until bubbly.
- Add chicken and noodles; mix well.
- Spoon into a greased 13 x 9 x 2 inch baking dish.
- Combine remaining 1/4 cup butter and cracker crumbs.
- Sprinkle over the chicken mixture.
- Bake at 325 degrees for 40-45 minutes.

- 1. In a Big bowl wisk Soups and milk. Once combined, add in green beans, corn, onion, and cheese. Stir to combined.
- 2. Secure a 13 X9 casserole dish. Spray dish with Canola oil spray. Preheat oven to 350degrees.
- 3. Add everything into casserole dish. Sprinkle fried onions. Bake 30 min. Serve warm.

This is a third generation recipe and one that is about as simple as it gets. French-style green beans are topped with Chicken breasts, a creamy soup mixture, and a sprinkling of parmesan cheese and baked until bubbly. Best served over mashed potatoes or rice.

- Preheat the oven to 350 degrees F (175 degrees C).
- Heat olive oil in a large skillet over medium-high heat. Quickly brown the chicken breast halves on both sides. Do not cook through. Remove from heat, and set aside.
- Pour the green beans into a 2 quart casserole dish. Place the chicken on top of the beans. In a small bowl, mix together the cream of chicken soup and mayonnaise. Spread over the top of the chicken and beans. Sprinkle Parmesan cheese over the top.
- Bake for 35 to 40 minutes in the preheated oven, until the chicken is no longer pink, and the cheese is browned.
