SPICED BALKAN CHICKEN

The spices give this chicken dish a true Balkan flavor. Wonderful and easy dish. Serve with rice, pasta, or new potatoes.

Steps:

  • Rub chicken pieces with lemon. Heat olive oil in a large Dutch oven or lidded skillet. Add onion and garlic; cook until softened, about 5 minutes. Add chicken pieces and cook until browned on all sides, 5 to 10 minutes.
  • Pour wine over the chicken. Add tomatoes with their juice, cinnamon, cloves, allspice, sugar, salt, and pepper; bring to a boil. Cover the Dutch oven and simmer until chicken is tender, 45 minutes to 1 hour.

4 skinless chicken thighs, or more to taste
½ lemon, cut into wedges
4 tablespoons olive oil
1 onion, coarsely chopped
2 large cloves garlic, minced
½ cup dry white wine
1 (14 ounce) can chopped tomatoes in juice
½ teaspoon ground cinnamon
½ teaspoon ground cloves
½ teaspoon ground allspice
1 pinch white sugar
salt and ground black pepper to taste

Steps:

  • Salt and peper the chicken.
  • In a large skillet (mine was non-stick) heat the oil and arrange the chicken.
  • Brown the chicken on both sides, then take out and set aside.
  • While the chicken is browning chop green onions, bell peper, celery and garlic.
  • After you take out the chicken, in the juce left over, saute the veggies and add all the seasonings.
  • When the veggies get tender put the chicken breasts back in and add the lemon juce.
  • Cover and simmer untill the chicken is cooked.

2 boneless chicken breasts (you can use more)
1 bunch green onion
6 -7 mushrooms
1 red bell pepper
2 stalks celery
2 cloves garlic
2 tablespoons olive oil
2 tablespoons chili powder
1 tablespoon dried oregano
1 tablespoon dried basil
2 tablespoons parsley flakes
salt & pepper
2/3 cup flour
1/4 cup fresh lemon juice
1 (16 ounce) can diced tomatoes
