CHICKEN BREASTS IN CAPER CREAM SAUCE
My husband (who is not a cook) developed this recipe when looking through what we had in the fridge. We love capers and my VERY picky 8-year old always asks for 'Daddy's chickie.'

Steps:
- Season chicken breasts with lemon pepper, salt, dill weed, and garlic powder.
- Melt butter in a large skillet over medium heat. Place breasts in skillet, and increase heat to medium-high. Turn chicken frequently, until brown, about 5 minutes. Reduce heat to medium, and cook 5 to 7 minutes, until breasts are cooked through. Remove chicken to a warm serving platter, and cover with foil.
- Return skillet to stove, and increase heat to high. Whisk in whipping cream, whisking continuously until reduced to sauce consistency, about 3 minutes. Remove from heat. Stir in capers. Pour sauce over chicken, and serve.

Steps:
- Pound chicken breasts between layers of heavy plastic wrap until even thickness, about 1/2" thick.
- Stir salt and pepper into flour. Dip both sides of chicken into flour, shaking off excess. (Discard any remaining flour.).
- Melt butter in a large skillet over medium-high heat. When foaming subsides, reduce to medium and add chicken. Cook until browned on both sides, 4-6 minutes per side. Transfer to plate and cover loosely with foil.
- Add garlic to butter and saute until fragrant, about 1 minute.
- Add wine and scrape up any browned bits from bottom of pan. Simmer 3-4 minutes. Add dill, lemon zest, lemon juice, cream and capers. Simmer until slightly thickened. Adjust salt and pepper in sauce if needed. Spoon over chicken and serve with rice or couscous.

- Preheat oven to 375 degrees. Season chicken with salt and pepper, to taste along with garlic powder, oregano, and basil. Combine butter and oil in a large oven-safe skillet (see note), once butter is melted add honey and stir to combine.

- If the chicken breasts are thick, pound them to an even thickness or cut them open horizontally to form thinner, even chicken breasts.
- In a small bowl, combine the lemon pepper, salt, dill and garlic powder. Sprinkle the mixture evenly over both sides of the chicken breasts.
- In a large skillet over medium heat, melt the butter. Add the chicken and cook until browned and cooked through, flipping once, 5-7 minutes on each side. Once cooked, remove to a plate and cover with foil to keep warm.
- Pour the cream into the same skillet, and whisk, scraping off the browned bits from the bottom of the pan. Cook until the mixture is thick enough to coat the back of a spoon. Stir in the capers. (The sauce will thicken a bit more as it cools.)
