- 1. Pour the boiling water into a small bowl, and stir in the gelatin until dissolved. Set aside.
- 2. Beat the chilled evaporated milk in a mixer bowl until stiff. Add the lemon juice and sugar; continue beating. Stir in the gelatin mixture and blend thoroughly.
- 3. Pour into crusts (or parfait dishes if you don't wish to use crust) and chill in fridge for at least one hour, preferably overnight until set.

- In a large bowl, beat cream cheese with wire whisk until smooth.
- Gradually beat in milk until well blended.
- Add pudding mix.
- Beat until smooth.
- Gently stir in 1/2 tub whipped topping.
- Spread over cherry pie filling on bottom of crust.
- Spread remaining whipped topping over pudding mixture.
- Spoon remaining cherry pie filling over whipped topping layer.
- Refrigerate 3 hours.
