EASY CHICKEN RICE CASSEROLE

Chicken pieces and rice baked slowly in milk and cream of chicken soup. A simple, creamy casserole. You can also use a whole (2 to 3 pound) chicken, cut into pieces. The choice is yours so choose and choose well! Then enjoy!

Easy Chicken Rice Casserole image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl combine the milk, rice, soup and seasoned salt if desired. Mix well. Pour mixture into a lightly greased 9x13 inch baking dish. Add the chicken pieces.
  • Cover dish tightly with aluminum foil and bake in the preheated oven for approximately 90 minutes or until rice is done, stirring every 30 minutes. Uncover the dish and bake for another 15 minutes to allow the rice to brown.

Biscuit-Topped Chicken and Cheese Casserole image

Steps:

  • Heat oven to 375°F. In 8-inch square (2-quart) glass baking dish, mix chicken, corn, soup and cheese.
  • In medium bowl, stir Bisquick mix and milk with fork or wire whisk until soft dough forms. Place dough on surface dusted with Bisquick mix. Knead 10 times. Roll into 7 1/2-inch round, 1/2 inch thick. With 2 1/2-inch round cutter, cut 6 biscuits. Place on chicken mixture.
  • Bake 20 to 25 minutes or until biscuits are golden brown.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • In a skillet, melt the butter over medium-high heat. Cook and stir the garlic, onion, celery, and carrots in butter until tender. Mix in the flour, sugar, salt, 1 teaspoon dried basil, and pepper. Stir in broth, and bring to a boil. Stirring constantly, boil 1 minute, reduce heat, and stir in peas. Simmer 5 minutes, then mix in chicken. Transfer mixture to the prepared baking dish.
  • In a medium bowl, combine the baking mix and 2 teaspoons dried basil. Stir in milk to form a dough. Divide the dough into 6 to 8 balls. On floured wax paper, use the palm of your hand to flatten each ball of dough into a circular shape; place on top of chicken mixture.
  • Bake in the preheated oven for 30 minutes. Cover with foil, and bake for 10 more minutes. To serve, spoon chicken mixture over biscuits.

  • Remove giblets from the inside of the chicken and discard. Rinse and add it to a deep pot. Fill a pot with water (enough to cover the chicken). Place the pot of chicken on the stovetop over medium-high heat. Bring the water to a boil. As soon as the water comes to a boil, reduce the heat to low, cover the pot, and let the chicken simmer. The chicken will typically cook in 30 minutes to an hour depending on the thickness of the meat.
  • Remove the chicken from the broth and place it on a cutting board. Allow it to cool enough to touch. Pull or cut away the bones from the meat and discard. Shred the chicken into bite-sized pieces.
  • Strain the broth through a sieve into a bowl to remove any solids from the broth. Pour the broth back into the pot and add the shredded chicken to the broth.
  • Add rice to the mixture and simmer until the rice has simmered as long as the package recommendation. Make sure you stir frequently and do not leave the rice too long. It may stick if you are not careful. Season with salt and pepper, to taste. Turn off heat.
