CHINESE CHICKEN SPAGHETTI
It's hard to believe that something that comes together this easily could be tasty and lower in fat. This dish is pretty zippy, but if you like your stir-fries extra spicy, increase the red pepper flakes a bit. -Jenna Noel of Glendale, Arizona

Steps:
- Cook pasta according to package directions. In a small bowl, whisk cornstarch and 1 tablespoon soy sauce until smooth; stir in 1 tablespoon sesame oil. Transfer to a large resealable plastic bag. Add chicken; seal bag and turn to coat. Let stand for 10 minutes. In a small bowl, combine the vinegar, sugar, remaining soy sauce and sesame oil; set aside., In a large nonstick skillet or wok, stir-fry chicken in canola oil until no longer pink. Remove to a platter and keep warm. In the same skillet, stir-fry peas and carrots for 5 minutes. Add the green onions, ginger and pepper flakes. Cook and stir until vegetables are crisp-tender. Return chicken to pan. Add soy sauce mixture; drain pasta; Add to skillet; toss until combined.

Easy, Easy, Easy!!! I got this recipe from an Aunt who made it for a family reunion. It has a great flavor and makes alot. Very Good! Does not include cooking time for the chicken.

Steps:
- In a bowl mix together the soup, broth& Ro-tel tomatoes.
- In a 13x9 greased casserole dish layer as follows: Spaghetti, Chicken, Soup mix, Cheese.
- Bake in a preheated 350 degree oven until heated through and cheese melts about 30-45 minutes.
- As soon as you remove from the oven stir to mix well, adding salt and pepper to taste.

- Preheat your oven to 350 degrees ( 175 degrees C ) and butter or grease your 9 x 13 baking pan or 2.5 quart casserole dish.
- Shred your rotisserie chicken or cube up any leftover chicken ( or turkey ) breast or thigh meat that you have on hand. If needed, cube up raw chicken meat and pan sear with a tablespoon of olive oil over medium high heat until cooked through.
- Cook the pasta until al dente, usually two minutes short of the boxed package instructions. Drain, rinse and set aside.
- Return the saucepan used for cooking your pasta to the stove top. Add the heavy cream, chicken broth, and chicken bouillon cube ( or canned cream soup with the broth and bouillon cube ). Heat over a medium temperature.

- Preheat the oven to 350F. Remove the meat from the chicken and rough chop into bite-sized pieces. Set aside.
- Boil spaghetti noodles per instructions on the package. Add 1-2 tsp salt to water, if desired. Use a large pot to boil spaghetti noodles; at least a 5-quart pot and stir frequently while boiling! Drain the noodles when they are cooked.
- While the spaghetti is cooking, add the butter to a 5-quart pot and melt over medium heat. Once melted, add the chopped onion, bell peppers, and celery. Simmer for about 5 minutes, then add both soups, tomatoes, cubed cheese, and black pepper. Stir with a whisk until the cheese is completely melted.
