GREEK TZATZIKI CHICKEN PIZZA #RSC
Ready, Set, Cook! Hidden Valley Contest Entry. I absolutely love Greek chicken salads, as well as traditional tzatziki sauce typically found on gyros, so I combined the two dishes to create this delicious pizza. The Hidden Valley® Original Ranch® Harvest Dill Dips Mix is a perfect accompaniment to all the simple, delicious ingredients. In each bite, you get the creamy, garlicky tzatziki as well as the savory chicken, salty olives, rich tomatoes, and tangy feta. Greek perfection!

- Preheat oven to 425 degrees Fahrenheit.
- To make the tzatziki, combine the Greek yogurt, Hidden Valley® Original Ranch® Harvest Dill Dips Mix, 1 tablespoons olive oil, lemon juice, salt, pepper, and garlic in a food processor.
- Process until thoroughly combined. Transfer to a separate dish, cover with plastic wrap and refrigerate for at least 30 minutes.
- Meanwhile; roll the dough into a 12-14 inch circle. Transfer dough to a lightly greased pizza pan. Brush 1 teaspoons olive oil over the entire crust and bake in the preheated oven for 15 minutes, or until light golden brown.
- Remove crust and transfer to a wire cooling rack until completely cool.
- Remove the tzatziki from the fridge and add the chopped cucumbers. Stir well. Spread the sauce evenly over the crust.
- Sprinkle the artichoke hearts, olives, and sun-dried tomatoes evenly over the sauce. Top with the chopped chicken and Feta cheese.
- Cut into 8 slices and enjoy immediately or cover and refrigerate until ready to serve. Refrigerate any leftovers.
HERBED CHICKEN CAESAR SALAD PIZZA

- Position an oven rack in the lower third of the oven and preheat to 500 degrees F. Oil a baking sheet.
- Roll out one disc of the Pizza Dough on a floured surface as thinly as possible and place on the prepared baking sheet. Brush with the olive oil and sprinkle with the grated Parmesan, salt and pepper.
- Bake on the lowest oven rack until the crust is cooked through and the cheese is melted, 12 to 15 minutes.
- Meanwhile, put the lettuce in a large bowl and add the Roasted Chicken Breast slices. Use a vegetable peeler to shave off large, thin slices of Parmesan over the leaves. Drizzle about half of the Green Herb Dressing over the top and toss gently to coat. Add more dressing if needed.
- Remove the pizza crust from the oven, place a generous amount of the salad on top, shave over extra Parmesan and serve.
- Sprinkle the yeast over 1 1/2 cups of warm--not lukewarm--water.
- In a mixer with a paddle attachment, combine the flour and salt. With the mixer running on low speed, drizzle in the olive oil and mix until combined. Pour in the yeast mixture and mix until combined.
- Coat a separate mixing bowl with a light drizzle of olive oil and tip the dough in. Form a ball and toss to coat the dough ball in the olive oil. Divide into 2 balls. Cover tightly with plastic wrap and allow to rise for at least 1 hour, or up to 3 or 4 days refrigerated.
- Preheat the oven to 375 degrees F. Line a roasting pan with foil.
- Put the chicken breasts on the prepared roasting pan, drizzle with the olive oil and sprinkle with the thyme, oregano, paprika, salt and pepper. Roast until cooked through, 30 to 40 minutes. Let cool.
- Add the mustard, vinegar, Worcestershire, anchovies, garlic and lemon juice to a blender or food processor. Pulse the processor or blend on low speed for several seconds. Scrape the sides and pulse again until everything is fairly smooth. With the food processor or blender running, drizzle in the olive oil in a small stream. Scrape the sides and mix again to thoroughly combine. Add the basil, parsley, Parmesan and some salt and pepper and blend until the herbs are chopped and the Parmesan is combined. The dressing will go green at this stage. Refrigerate the dressing for a few hours before using it on the salad.

- Unroll pizza crust onto a 12-in. pizza pan coated with cooking spray; flatten dough and build up edges slightly. Prick with a fork. Bake at 400° for 11 minutes or until lightly browned. Cool on a wire rack., In a nonstick skillet, cook chicken in oil over medium heat until no longer pink; cool slightly. Meanwhile, in a small bowl, combine the dressing, 1/4 cup Parmesan, lemon-pepper and garlic. This recipe uses canned chicken, but if you want to use leftover chunked chicken or turkey, it 's even better. A dab of sweet relish is a nice taste surprise, and we love the apples, pecans, and raisins. The creamy salad dressing finishes it off nicely.

- Preheat oven to 400 degrees F.
- If using a pizza stone, preheat the stone while preheating the oven.
- Prepare dough according to package directions.
- Transfer dough to baking sheet or if using pizza stone, continue with directions.
- Combine Hidden Valley Ranch and Greek Yogurt; set aside.
- Heat oil in a large skillet over medium-high heat. Add chicken tenders, garlic and pepper and saute until golden brown, about 10 minutes. Add mushrooms and spinach and saute till mushrooms are soft. Remove from heat. When chicken is cool enough to handle, dice chicken to yield a little over 1 cup. In a small bowl, toss chicken, with 2 tablespoons of Hidden Valley Ranch mixture. Set aside.
- Measure one cup Hidden Valley Ranch Mixture and spread evenly over pizza crust. Distribute chicken, mushrooms, and garlic over entire pizza surface. Add the cheeses.
- Using a pizza peel, transfer the pizza to the stone that has preheated in the oven.
- Cook for 20 min or until crust is golden brown and cheese is bubbly.

- Remove dough from refrigerator. Let stand at room temperature 20 minutes.
- Preheat oven to 450°F.
- In a small bowl, combine Hidden Valley Ranch Dressing and Alfredo sauce. Set aside.
- Heat vegetable oil in medium nonstick skillet over medium heat. Add shallots and cook, stirring frequently, 8 minutes or until soft and caramelized. If shallots begin to brown too quickly, add water 1 Tablespoon at a time, stirring until water evaporates. Add spinach to skillet with shallots and sauté 2 minutes or until spinach wilts. Remove from heat.
- In a medium bowl, combine chicken breast, lemon juice, and the shallot-spinach mixture. Season with salt and pepper.
- On a floured work surface, roll out pizza dough into a 13-inch round. Transfer dough to a pizza pan. Spread Ranch-Alfredo sauce evenly over crust. Top with mozzarella and chicken mixture. Sprinkle evenly with Parmesan cheese. Bake pizza 15 minutes or until crust is browned and crisped on the bottom and the cheese is melted.

- Preheat oven to 400°F.
- Place 1 teaspoon of cornmeal on a pizza stone and roll out pizza dough onto stone; bake in oven for 5 minutes.
- Meanwhile heat oil in a medium skillet and wilt spinach for 1 minute; remove to drain and set aside.
- Place chicken, flour, and ranch dip in a plastic bag; shake to coat. Add Chicken to hot oil and cook 5-6 minutes stirring often. Remove from oil to drain and set aside.
- In a small skillet cook bacon about 4 minutes; remove to drain.
- To assemble Pizza, spread ranch dressing on baked pizza crust.
- Add chicken, bacon, spinach and olives.
- Sprinkle cheeses on top.
