Arugula and Tomato Salad image

Steps:

  • Toss the tomatoes with the balsamic vinegar, 1/4 teaspoon salt and a few grinds of pepper in a medium bowl. Set aside until juicy, about 5 minutes. Toss the arugula with the olive oil, a pinch of salt and a few grinds of pepper in a large bowl.
  • Spread the arugula on a platter. Spoon the tomatoes and their juices on top, then drizzle with more olive oil and vinegar. Top with parmesan.

Chicken Schnitzel with Arugula and Tomato Salad (Cooking for 2) image

Steps:

  • Between pieces of plastic wrap or waxed paper, place each chicken breast smooth side down; gently pound with flat side of meat mallet or rolling pin until about 1/4 inch thick. Season chicken with 1/4 teaspoon of the salt and 1/4 teaspoon of the pepper.
  • In shallow pan, stir together flour, remaining 1/4 teaspoon salt and 1/4 teaspoon pepper. Coat both sides of chicken with flour mixture. Beat eggs in shallow bowl with whisk to blend. Place bread crumbs in another shallow bowl. Dip chicken into beaten eggs; turn to coat. Dredge in bread crumbs, coating completely.
  • In 12-inch nonstick skillet, heat 2 tablespoons of the oil over medium heat. Add chicken; cook 6 to 8 minutes, turning once, to at least 165°F. Transfer chicken to serving plates.
  • Meanwhile, in small bowl, stir remaining oil and the lemon juice. In medium bowl, toss arugula and tomatoes with oil mixture.
  • Serve salad with chicken and lemon wedges on the side.

Steps:

  • In a small bowl, whisk 2/3 cup oil, shallots, vinegar, 1/2 teaspoon salt and 1/4 teaspoon pepper until blended. Reserve 3 tablespoons for dressing. Pour remaining vinaigrette into a large bowl; add mushrooms and toss to coat. Let stand 5 minutes., Using a slotted spoon, remove mushrooms from vinaigrette. Sheet-Pan Chicken With Potatoes, Arugula and Garlic Yogurt image

Steps:

  • Combine chicken and potatoes in a large bowl. Season with salt and pepper. In a small bowl, whisk together harissa, cumin and 3 tablespoons oil. Pour over chicken and potatoes and toss to combine. Let stand at room temperature for 30 minutes, or up to 8 hours in the refrigerator.
  • Meanwhile, in a medium bowl, combine leeks, lemon zest, a pinch of salt and the remaining 1 1/2 tablespoons oil.
  • Heat oven to 425 degrees. Arrange chicken and potatoes on a large rimmed baking sheet in a single layer. Roast 15 minutes. Toss potatoes lightly. Scatter leeks over pan. Roast until chicken and potatoes are cooked through and everything is golden and slightly crisped, 25 to 30 minutes longer.
  • While chicken cooks, place yogurt in a small bowl. Grate garlic over yogurt and season to taste with salt and pepper.
  • To serve, spoon yogurt over chicken and vegetables in the pan. Scatter arugula and dill over mixture. Drizzle with oil and lemon juice and serve.

CHICKEN AND POTATO GRATIN WITH BROWN BUTTER CREAM

This gratin is decidedly autumnal, inspired by a recipe from one of my favorite food writers, Richard Olney. Olney's chicken gratin calls for making a savory custard, but here you'll combine brown butter and heavy cream with aromatics for a flavorful and easy sauce instead. It's still a luxurious dish. The breadcrumbs for the topping get toasted separately, so they stay crisp and the chicken (ideally seasoned a day in advance so the salt has time to work its way into the meat) and vegetables can get nicely browned and crisp too. I love that this gratin can reinvent itself based on what's available at the market (or in my fridge). In the spring, you might make it with asparagus and young onions; in summer, with tomato wedges, swapping in olive oil for the cream. I recommend serving this fall version with lemon wedges for squeezing over to cut the richness of the dish. A brightly dressed arugula salad would also do the trick.

Chicken and Potato Gratin With Brown Butter Cream image

Steps:

  • Season chicken all over with 4 tsp. salt. Place in an airtight container and cover. Chill at least 1 hour and up to 1 day.
  • Place a rack in middle of oven; preheat to 425°F. Toss potatoes, shallots, and 2 tsp. salt in a large bowl.
  • Melt 4 Tbsp. butter in a small saucepan over medium heat and cook, stirring often, until butter foams, then browns, 5-8 minutes. Immediately remove from heat (it will continue to darken) and stir in cream, garlic, pepper, nutmeg, and remaining 1½ tsp. salt. Set saucepan over medium-low heat and cook, stirring, until salt is dissolved and mixture is warm to the touch. Stir in thyme and sage; remove from heat.
  • Heat remaining 1 Tbsp. butter in a large stainless-steel skillet over medium-high until melted and bubbling. Working in 2 batches, cook chicken, skin side down, until golden underneath, about 5 minutes. Transfer chicken to a 13x9" or 3-qt. baking dish and arrange skin side up. Set skillet with pan drippings aside. Nestle potatoes and shallots around chicken (don't place on top). Pour brown butter cream over chicken and vegetables, making sure herbs and spices are evenly dispersed and tucking herbs into vegetables so they don't get too crispy when they bake.
  • Bake gratin until cream is mostly reduced and chicken and vegetables are dark golden brown, about 40 minutes. Let gratin cool 5-10 minutes.
  • Meanwhile, pulse bread in a food processor until pieces are about oat-size (you should have about 1¼ cups). Toss breadcrumbs in pan drippings in reserved skillet to coat. Cook over medium heat, scraping up browned bits with a spatula, until deep golden brown, 5-7 minutes. Let cool.
  • To serve, top gratin with breadcrumbs. Serve lemon wedges alongside for squeezing over if desired.

Chicken Saltimbocca with Arugula and Tomato Salad image

Steps:

  • 1 Fill the sink with cold water while you put 2 tablespoons of the oil in a heavy skillet large enough to hold all the chicken in one layer without crowding. Put the skillet over medium heat. (If the butcher hasn't done so, pound the chicken between two sheets of aluminum foil or wax paper with the side of a cleaver or a meat pounder.) Season the chicken with salt and pepper. Put the flour on a pie plate or wax paper. Press a slice of prosciutto onto each of the breast halves, then dredge the breast halves in the flour, shaking off any excess. Raise the heat under the skillet to medium-high and add the chicken, prosciutto side down. Cook for 5 minutes on one side.
  • 2 While the chicken cooks, cut the arugula crosswise into 1/2-inch-wide strips, discarding the stems. Wash the arugula briefly but vigorously in the sink to remove grit, then spin dry in a salad spinner. Remove any excess moisture with paper towels. Cut the tomato in half lengthwise, gently squeeze out some of the juice and seeds, and cut each half into thin wedges, removing the core as you do.
  • 3 Turn the chicken over and cook for 3 minutes. Meanwhile, chop the basil. Put the remaining 2 tablespoons of oil, the vinegar, and salt and pepper to taste in a small bowl and mix well with a whisk. Chop the sage. (If using dried sage, crush with fingers.)
  • 4 Sprinkle the sage on top of the chicken, add the wine, and cook for 1 to 2 minutes, just until the chicken is cooked through and opaque. (Cut into one piece to check if you're not sure.) Remove the chicken to a serving platter. Raise the heat to high under the skillet and stir the wine often with a wooden spoon, scraping the bits from the bottom of the pan. Cook for 1 to 2 minutes, or until the liquid is reduced and lightly thickened to create a sauce.
  • 5 While the sauce finishes cooking, put the arugula and tomato in a large mixing bowl, sprinkle with the basil and toss with the dressing. Pour the sauce over the chicken and serve with the salad.
