Steps:
- 1. Heat the butter in a medium saucepan over medium heat. Add the shallots, cumin and salt. Cook, stirring, until the shallots are tender, 2 to 3 minutes. Stir in the rice until the grains are well coated with the buttery shallot mixture.
- 2. Add the broth, orange zest and cinnamon stick. Bring to a boil, cover and reduce the heat to medium-low. Cook until all the liquid has been absorbed and the rice is tender, about 15 minutes. Remove from the heat and let stand for 5 minutes. Fluff with a fork, discarding the zest and cinnamon stick. Transfer to a serving dish and sprinkle with the cashews and scallions.

- Heat the oven to 220C/200C fan/ gas 6. Pour 800ml just-boiled water into a heatproof jug, crumble in the stock cube and stir in along with half the curry paste and the butter or oil. Pour the mixture into a large baking dish or roasting tin (ours was 25 x 35cm and 5cm deep), and tip in the rice and cinnamon stick. Season and stir well.
- Cut a few deep slashes into each chicken thigh, then rub all over with the remaining curry paste and some seasoning. Arrange on top of the rice mixture, then cover the dish or tin with foil and bake for 30 mins.
- Meanwhile, heat a drizzle of oil in a frying pan over a medium heat, and fry the onion for 10-15 mins, or until soft and caramelised.
- Uncover the chicken and rice. The rice should still be wet, but if not, top up with 50-100ml more water. Scatter over the almonds and bake, uncovered, for 10-15 mins more until the chicken is browned, all the liquid has been absorbed and the rice is cooked through and crisp at the edges. Meanwhile, cook the green beans in boiling water for 2-3 mins, then drain. Scatter the coriander and fried onions over the chicken and rice, spoon a few dollops of chutney over the dish, and serve with the green beans.

SPICED ROAST CHICKEN WITH FRAGRANT JASMINE RICE
I got this recipe out of a Dish Magazine. It is beautiful! Prep time included time to marinate. I sometimes marinate over night.

Steps:
- CHICKEN: Use kitchen scissors to cut down both sides of the back bone and remove.
- Open the chicken out like a book and snip through the wishbone to enable the chicken to lie flat.
- Slash the skin several times and place the chicken in a large dish.
- Pound the garlic, ginger, chilli and sugar to paste in a mortar and pestle or blend in a small food processor.
- Add the remaining ingredients and mix well.
- Pour the marinade over the chicken and rub into the meat.
- Cover and marinate in the refrigerator for 2-3 hours if possible.
- Preheat the oven to 200°C.
- Heat a little oil in an over proof saute pan over a medium heat.
- Take the chicken out of the marinade, letting the excess drip back into the dish.
- Place the chicken in the pan, skin side down and allow to brown.
- Turn the chicken over and pour over the marinade.
- Roast the chicken in the over 50-60 minutes, basting a couple of times during cooking.
- Transfer the chicken to a plate and rest, lightly covered, for 5 minutes.
- Tip the pan juices into a small pot.
- Mix the cornflour with the water and stir into the juices.
- Simmer for 2 minutes then add a good squeeze of lime juice and pour into a serving jug.
- RICE: Heat the oil in an oven-proof saute pan or pot with a lid.
- Add the onion, garlic, ginger, cardamom pods and mustard seeds and gently fry until tender.
- Add the rice, stock and salt and bring to the boil.
- Cover and place back in the oven for 25 minutes.
- Stir the rice once during cooking.
- Remove from the oven and sit covered, for 5 minutes before serving.
- TO SERVE: Spoon the rice onto a platter.
- Cut the chicken into serving pieces and place on top.
- Scatter fresh herbs over the chicken and garnish with lime wedges.
- Bowls of thick plain yoghurt, roasted chopped peanuts and crispy shallots are nice accompaniments.

CHILE CHICKEN WITH JASMINE RICE

- For the rice: Place the rice in a heavy-bottomed saucepan, and add the boiling water. Bring the mixture to a boil, and then cover it with a tight-fitting lid, and reduce the heat to low. Cook for 15 to 20 minutes. Uncover the pan, and remove it from the heat. Fluff up the rice grains with a fork, and serve immediately.
- For the sauce: In a blender, puree the garlic, tomatoes, ginger, chopped chile, red pepper, water, ketchup, and brown sugar.
- For the chicken: Heat a wok over a high heat, and add the groundnut oil. Add the chicken to the hot pan, and stir-fry for 2 to 3 minutes, or until the pieces start to turn brown. Add the zucchini, and red peppers and stir-fry together for another 1 minute. Pour in the sauce, and bring everything to a boil.
- Season the dish with the soy sauce and garnish with the spring onions, and serve immediately with the jasmine rice.

- Preheat oven to 325 F or 165°C.
- In a small bowl combine lime juice,rum and brown sugar. Set aside.
- Mix together all the spices. Place chicken in a roasting pan and Brush with the oil then rub in the spice mixture.
- While chicken is roasting baste with the juice, rum ,sugar mixture every 15 -20 minutes.
- roast for about 90 minutes or until meat thermometer reads 180 when placed in the thickest part of the thigh or juice run clear.

- Preheat oven to 425°. In a small bowl, mix the first 5 ingredients. In a small saucepan, melt butter; stir in lemon juice, mustard, paprika and garlic salt. Keep warm., Sprinkle half the thyme mixture inside chicken; if desired, place quartered lemon inside chicken. Place chicken on a rack in a shallow roasting pan, breast side up. Tuck wings under chicken; tie drumsticks together., Brush outside of chicken with 1/2 cup butter mixture; sprinkle with remaining thyme mixture. Roast 1 hour, basting every 15 minutes with remaining butter mixture. (Cover loosely with foil if chicken browns too quickly.), Roast until a thermometer inserted in thickest part of thigh reads 170°-175°, 30-60 minutes longer. Remove chicken from oven; tent with foil. - Cook Jasmine rice: Mix 1/2cup of rice with 3/4 cup of water, salt and butter. Bring to boil, cover and cook for 10 minute Remove from heat and let sit for 5 minute Fluff before serving.
- Salsa: Halve the avocado lengthwise. Slice one half (save for garnish) and roughly chop the other half. Core the plum tomatoes, and roughly chop. Slice and chop the onion into similar sized pieces. Mix all in a bowl. Cut 2 wedges out of lime and juice the rest. Add the lime juice to the bowl and season to taste with salt and pepper. Set aside.
- Stir 1 teaspoon salt, 1/4 teaspoon black pepper, and cayenne pepper together in a small bowl. Rub evenly into the chicken breasts.
- Heat the olive oil in a skillet over medium heat; cook the chicken in the heated oil until no longer pink in the center and the juices run clear, 5 to 7 minutes per side.
- To Plate: Place chicken on top of 1/2 cup rice. Top with avocado salsa. Place sliced avocado and lime wedges for garnish.

- In a large pot, bring the extra virgin olive oil to medium heat and add the minced onions. Cook the onion for about 10 minutes until translucent and beginning to caramelize.
- While the onion is cooking, grind the first pinch of saffron threads to a powder in a spice mortar and pestle, then add the second pinch but do not grind them. Add 1/4 c of hot water to the saffron threads in the mortar and allow them to soak for about 5 minutes.
- While the saffron is soaking and the onion is cooking, rinse your jasmine (or basmati) rice and add them to the large pot with the onions, once the onions are caramelized. Saute the rice with the cooked onion for about one minute.
- Add the yellow soaked saffron liquid over the top of the rice in the large pot (make sure to get all of the saffron out of the mortar!) then add the chicken broth and salt. Bring the rice and broth mixture to a boil, stirring occasionally, then cover and reduce the heat to low. Cook for 20 minutes on low, or until all of the broth is absorbed.
