MOCK TUNA SALAD

This is a chickpea spread that tastes like tuna salad! No kidding! Great served in a sandwich.

Mock Tuna Salad image

Steps:

  • In a medium bowl, combine garbanzo beans, mayonnaise, mustard, relish, chopped green onions, salt and pepper. Mix well.

2 tablespoons mayonnaise
2 teaspoons spicy brown mustard
1 tablespoon sweet pickle relish
2 green onions, chopped

Quinoa with Chickpeas and Tomatoes image

Steps:

  • Place the quinoa in a fine mesh strainer, and rinse under cold, running water until the water no longer foams. Bring the quinoa, salt, and water to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the quinoa is tender, 20 to 25 minutes.
  • Once done, stir in the garbanzo beans, tomatoes, garlic, lime juice, and olive oil. Season with cumin, salt, and pepper. Sprinkle with chopped fresh parsley to serve.

MOCK TUNA SALAD (CHICKPEA SALAD)

Made with chickpeas (garbanzo beans), this is a wonderful sandwich filling, especially for vegetarians who miss tuna salad. I liked it more oniony so I added a little extra minced onion, but it's still wonderful without it. I enjoyed this the most stuffed in pita bread with slices of ripe plum tomatoes, and also would serve it often on crackers as a snack or appetizer.

  • Fill a saucepan with the water and bring to a boil. Add the quinoa and cook for 12-14 minutes, stirring occasionally. Pour the quinoa through a fine mesh strainer and let all the liquid drain from the grains. Transfer the quinoa back to the pot and cover with the lid for 10 minutes to steam. Remove the lid from the pot and let the quinoa cool to room temperature. Do not use warm quinoa when making the salad.
  • In a small bowl combine the lemon zest, chopped garlic, dijon mustard, lemon juice, kosher salt, black pepper and olive oil. Whisk until emulsified. set aside.
  • Place the kale leaves on a cutting board and aggressively massage them with your hands until the leaves are soft and pliable and the kale has a grassy aroma. Bunch the kale into a tight ball with one hand and use a sharp knife to thinly slice the kale into very fine ribbons.
