CHILE-PEPPER WATER
Steps:
- Blend garlic, chiles, ginger, a pinch of salt, 1/3 cup water, and vinegar in blender until smooth. Bring remaining 1 1/4 cups water to a boil. Then add chile mixture and bring to a boil. Cool completely. (Keeps, covered and chilled, 1 month.)
HAWAIIAN CHILI PEPPER WATER
This is a popular condiment in Hawaii, but you can use it wherever you are. It goes great with rice and Asian-style dishes and it's easy to make. Remember to keep it refrigerated to preserve the flavor and color.

Steps:
- Mix everything (except the onion and the oil),crushing chilies with your hand.
- Put it on to boil.
- When it comes to a rolling boil, take it off the stove.
- In a seperate pan, heat the oil and fry the onion.
- Add to the pepper water.
- Let it boil a bit.
- Then let it rest on the stove till the spices settle to the bottom.
- Pour out into a servingin dish being careful not to let the settled spices pour out.
