CHILI WITH TURKEY AND BEANS

Ground turkey, stewed tomatoes, and four kinds of beans make this chili quick, light, and flavorful. It's great served in bowls and sprinkled with cheese for a fall lunch or supper.

Chili With Turkey and Beans image

Steps:

  • Cook turkey, onion, and green pepper in a large soup pot or Dutch oven over medium heat until turkey is no longer pink, about 10 minutes, stirring often; rain excess grease. Stir stewed tomatoes, chili beans, kidney beans, pinto beans, black beans, jalapeno pepper, garlic, chili powder, molasses, cumin, bouillon cube, oregano, salt, and cayenne pepper into turkey mixture.
  • Bring chili to a boil, reduce heat to low, and cover pot. Simmer until vegetables are tender and flavors have blended, about 20 minutes.

1 (15 ounce) can black beans, rinsed and drained
1 jalapeno pepper, seeded and chopped
4 cloves garlic, crushed
2 tablespoons chili powder
1 tablespoon molasses
2 teaspoons ground cumin
1 cube French onion bouillon
1 teaspoon dried oregano
1 teaspoon salt
¼ teaspoon cayenne pepper

Ground Turkey, Bean and Mushroom Stir Fry image

Steps:

  • In a small bowl, whisk together rice vinegar, hoisin sauce, soy sauce, and brown sugar until well combined; set aside.
  • Spray a large frying pan with nonstick cooking spray and place on the stove top over medium-high heat.
  • Add ground turkey and minced garlic to the pan.
  • Sprinkle the garlic salt, pepper, and onion salt over the meat.
  • Add half of the liquid mixture to the pan so the juices cook in with the meat.
  • Cook the meat, breaking it up, for about 15 minutes or until fully cooked through.
  • Set the meat aside, and place the green beans and mushrooms into the pan and drizzle the olive oil over it.
  • Cook until the mushrooms are a shiny brown and the green beans soften and reach desired tenderness.
  • Add the meat back into the pan and pour the rest of the liquid mixture over the meat, mushrooms and beans.
  • Cook until the juice is well incorporated.
  • Serve over cooked rice.

SZECHUAN GREEN BEANS WITH GROUND PORK

This is a bit spicy so you may want to decrease the pepper flakes and add more at the end for taste. I made this for a pot-luck Chinese dinner that is why the serving size is for 8. Can be cut in half. Delicious over Chinese white rice.

Szechuan Green Beans With Ground Pork image

Steps:

  • Steam beans 5 minutes (should be snappy not mushy).
  • Combine the first 4 ingredients in a medium bowl.
  • Heat oil in a large non-stick skillet over med high heat. Saute pork mixture until pork loses it's pink color - stirring to a crumble. Add steamed green beans and garlic - saute for 3-5 minutes more.
  • Combine hoisin sauce, sugar, pepper flakes and soy sauce in a small bowl - stirring with a whisk to incorporate ingredients.
  • Pour mixture into pan with pork and green beans. Cook another 3-5 minutes or until heated through, stirring frequently.
  • Serve over hot rice - Enjoy!

Chinese Green Beans with Ground Turkey image

Steps:

  • Start rice cooking in lightly salted water.
  • When rice is about 15 minutes from done, heat large skillet over high heat. Add sesame oil, and sauté green onions and garlic for about 2 minutes. Stir in ground turkey and sauté 3-5 minutes, until meat is mostly cooked. Crumble meat as much as possible.
  • Stir in chili garlic sauce, hoisin sauce, and ginger. Add green beans and soy sauce, and stir to coat. Continue cooking over high heat for 7-9 minutes longer, stirring frequently, until beans are slightly tender.
  • Stir in rice vinegar, and cook one minute longer. Serve over cooked rice.
