CHINESE STIR-MICROWAVE
I was assigned to cook a dish of vegetables for my family's reunion dinner this Chinese New Year, but due to a migraine, my plan to cook claypot tofu went down the drain. This recipe at http://www.ehow.com/how_4556015_chinese-stirfry-microwave.html came to my rescue, but with some changes! Well received and complimentary to my sister-in-law's chilli crab.

- In a small bowl, whisk the soy sauce, water, dry sherry, sesame oil, sugar, cornstarch, red pepper flakes and dry mustard together. Set aside.
- In a large nonstick skillet, bring 1 inch of water to a rapid boil. Add the broccoli and cook for 2-3 minutes, or until tender-crisp. Strain the broccoli in a colander and then run under cold water to stop the cooking process. Set aside and allow to fully drain.
- Wipe the skillet dry. Add 2 tablespoons of vegetable oil and heat over high heat. Add the shiitake mushrooms and red peppers and cook, stirring occasionally, for 5-6 minutes, until the mushrooms are browned and the peppers are softened. Add the garlic, white/light green scallions, and ginger; cook, stirring constantly, until fragrant, about 30 seconds. Return the broccoli to the pan and cook until warmed through, about 1 minute. Add the reserved sauce. Toss and cook until the sauce is thickened and the vegetables are evenly coated, about 30 seconds. Transfer to serving dish and sprinkle with dark green scallions. Serve with rice, if desired.

- Soak the mung bean vermicelli noodles for about 10 minutes until soft. Cut the bundle in half, drain and set aside. Prep the cabbage.
- Beat the eggs along with a pinch of salt, a splash of sesame oil and a splash of cooking wine. Scramble the eggs quickly in a hot wok with a tablespoon of oil. Eggs cook very fast, so this is usually done in less a minute. Take the eggs out of the wok and set aside.
- Heat two more tablespoons of cooking oil in the wok over medium heat. Add the chili, garlic, and scallion. Cook for a couple minutes until fragrant. Before the peppers start to turn brown, add the cabbage and turn up the heat to high. Stir and mix everything together.
- Add noodles, cooked egg, a little more salt to taste, 1 more tablespoon shaoxing wine, ½ teaspoon sesame oil, ¼ teaspoon white pepper, and ½ teaspoon soy sauce. Stir everything well together and continue to stir-fry for another couple minutes. Plate and serve!
