- Place chipotle chile pepper and ancho chile pepper in a bowl; pour in water. Cover bowl and let sit until peppers are softened, at least 10 to 12 hours. Drain water and remove seeds from peppers.
- Blend chile peppers, red onion, garlic, sea salt, cumin, oregano, and black pepper in a blender until a coarse paste forms; add olive oil and blend until marinade is smooth.
- Pound chicken thighs flat with a meat mallet and trim excess skin. Place chicken in a resealable plastic bag and add marinade. Turn chicken several times to coat. Seal bag and marinate at least 8 hours.
- Preheat an outdoor grill with top and bottom plates for medium-high heat. Remove chicken from bag and discard marinade.
- Cook chicken on the preheated grill until no longer pink in the center and the juices run clear, 5 to 10 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Cut into strips.

- Place chicken breast halves between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound chicken with the smooth side of a meat mallet to a thickness of 1/2-inch. Season with salt and pepper to taste.
- Heat olive oil in a skillet on high heat until it begins to shimmer, about 1 minute. Reduce heat to medium; cook chicken breasts until browned and no longer pink inside, about 5 minutes per side. Transfer cooked chicken to a warm plate and loosely cover with aluminum foil.
- Melt butter in the skillet; stir in flour and cook for about 2 minutes. Stir in chicken broth, scraping up any browned bits from the bottom of the pan; cook and stir until gravy begins to simmer and thicken, 1 to 2 minutes.
- Stir in green onions and chipotle chile powder.
- Return chicken breasts to the skillet and cook until heated through, 1 to 2 minutes.

- Preheat oven to 375°F.
- Place chicken breasts in an ungreased baking pan.
- Shake the seasonings over the chicken, then rub. Add one tbsp of the 'butter' in a dollop on top of the chicken.
- Bake for 25-30 minutes, then take out of oven and flip. Sprinkle the seasonings on the newly upturned side, and put the other tbsp dollop on top.
- Continue baking another 25-30 minutes, or until juices run clear when poked, and inner temp is 175°F.
"CHIPOTLE GRILLED CHICKEN BREASTS"
Moaning around the house, thinking what to make for dinner I came accross the chipotle pepper sauce I had just bought and decided to minimize the pepper spicy flavor a little with some lemon dipping oil. It was a hit, not to spicy and lemony flavor. I opted for a side salad and some freshly squeezed lemonade. Easy, light and refreshing........deliciossso!!!

- In large ziplock, place boneless chicken breasts, salt, freshly ground pepper and lemon dipping extra virgin olive oil, closing bag tightly and marinating for 1/2 an hour, at least.
- In hot heavy stove top grill, lightly cover with lemon dipping extra virgin olive oil, place chicken pieces.
- Cook for 3-4 minutes, turn and brush with chipotle pepper sauce.
- Turn once again and brush with remaining chipotle pepper sauce.
- Remove from grill and serve with some lemon wedges and a side salad.
