Steps:
- Line 2 baking sheets with plastic wrap and set aside.
- Using hands, combine chicken, sauce, tomatillos, yellow onion, cilantro, garlic and cumin in a bowl.
- Form into 16 (3 1/2-inch) thin patties (about 1/3 cup each).
- Arrange in a single layer on prepared baking sheet and freeze until firm, about 15 minutes.
- Meanwhile, preheat broiler.
- Using a 4-inch biscuit cutter, cut tortillas into 16 smaller rounds.
- Arrange in a single layer on a baking sheet and broil, turning once, until golden and slightly crisp, 2-3 minutes.
- Transfer on baking sheet to a rack to cool.
- Meanwhile, preheat grill and lightly oil rack.
- Grill burgers, turning once, until cooked through, 3-4 minutes.
- Transfer to a large plate.
- Assemble burgers: Place 1 tortilla round on each serving plate, then top with 1 burger, 1 red onion slice and 1 tomato slice, another burger, onion and tomato slice.
- Top each with lettuce and tortilla round.
- Serve warm.

Steps:
- Heat olive oil in saute pan over medium heat. Add onions and saute for 2 minutes, peppers and saute for 3 more minutes. Add black beans, chipotle and cumin, cook for an additional 2-3 minutes. Place aside to cool. Combine chicken and vegetable mixture to form into a patty, season both sides with pepper.
- Shape into 5 patties. Can be individually frozen at this point, let thaw for 1 day in refrigerator before sauteing.
- Saute patties in small amount of olive oil about 4 minutes / side or until done. Place burger on bun and top with avocado slices and lettuce.
- **Chipotle pepper in adobo sauce- comes in a small can in the International foods aisle of the grocery. Fish out needed peppers with a little sauce, chop and add to recipe. Freeze the rest of the can contents in a freezer ziplock bag. Whenever you need some, you can just break off a chunk and add it to your recipe (like chili, tacos, etc).

- Put the chicken breast between two pieces of cling film and bash with a rolling pin or pan to about 1cm thick. Mix the chipotle paste with half the lime juice and spread over the chicken.
- Heat a griddle pan over a high heat. Once hot, cook the chicken for 3 mins each side until cooked through, adding the cheese for the final 2 mins of cooking. Add the bun, cut-side down, to the griddle pan to toast lightly. Season the chicken.
- Meanwhile, mash the avocado with the remaining lime juice. Stir in the cherry tomatoes, jalapeño and garlic, and season with a little salt. Spread over the base of the bun, then add the chicken followed by the top of the bun.

- MAKE THE SPREAD: Stir the ingredients together in a bowl.
- MAKE THE SANDWICH: Coat each slice of toast with the chipotle spread, to taste. You may have some left over. Divide the chicken between two slices of toast, placing the slices in a single layer on top of the spread. Top with the bacon slices and a single layer of tomato slices. Cover with lettuce leaves and then the remaining slices of toast, spread side down.
- Press the tops of the sandwiches down firmly. Using a serrated knife, cut through the sandwiches on the diagonal, then cut through on the diagonal in the opposite direction. Each sandwich will have 4 wedges. Place a toothpick in each of the wedges and serve.
- Add a quick side salad to make a satisfying meal.

- Prepare grill for cooking over medium-hot charcoal (moderate heat for gas); see "Grilling Procedure," below.
- Meanwhile, open any whole chipotles and discard seeds, then mince chipotles.
- Mix chipotles (with sauce), beef, onion, and salt with your hands, then form mixture into 4 (3/4-inch-thick) patties.
- Grill burgers on lightly oiled grill rack, covered only if using gas grill, turning over once, 4 minutes total for medium-rare. Grill English muffins, cut sides down, until grill marks appear, about 30 seconds. Serve burgers in English muffins.
- Grilling Procedure
- If using a charcoal grill, open vents on bottom of grill, then light charcoal. When charcoal turns grayish white (about 15 minutes from lighting), hold your hand 5 inches above grill rack to determine heat for charcoal as follows:
- Hot: When you can hold your hand there for 1 to 2 seconds
- Medium-hot: 3 to 4 seconds
- Low: 5 to 6 seconds
- If using a gas grill, preheat burners on high, covered, 10 minutes, then, if necessary, reduce to heat specified in recipe.

- In a large mixing bowl, combine all ingredients for the patties until thoroughly mixed. Divide meat into four, large and round equal portions to make the patties. Flatten to the approximate size of your burger buns. Press your thumb into the center of each patty, forming an indent, to allow for even cooking.
- Place burger patties on the grill surface. For a medium rare patty, cook each side for about 4-5 minutes. For a medium patty (my preferred style), cook 5-6 minutes one side, and 4-5 minutes on the other. Remove to a plate to rest for 3-4 minutes.
