Chipotle Cauliflower 'Rice' image

Steps:

  • Pulse cauliflower in a blender until it is broken up and looks like rice.
  • Combine cauliflower 'rice' and water in a nonstick pan or cast iron skillet; saute over medium heat until slightly browned and softened, 5 to 8 minutes. Stir in chipotle sauce, recaito, tomato paste, and garlic powder. Cook, stirring occasionally, until liquid reduces and mixture thickens, about 20 minutes.

Chipotle Copycat Lime Rice Recipe image

Steps:

  • In a 2-quart heavy saucepan, heat oil or butter over low heat, stirring occasionally until melted.
  • Add rice and lime juice, stir for 1 minute.
  • Add water and salt, bring to a full rolling boil.(Some people have had success with 1 cup of water, but when I've made it with 2 it worked for me).
  • At boiling, cover, turn down to simmer over low heat until rice is tender and the water is absorbed, about 25 minutes.
  • Add in the cilantro and fluff rice with a fork.

1 teaspoon vegetable oil or 1 teaspoon butter
2 teaspoons fresh cilantro
2/3 cup white basmati rice
1 cup water

Chipotle Rice Bowl image

Steps:

  • Bring water and salt to a boil.
  • Add rice and stir.
  • Simmer for 20 minutes covered.
  • Add juice of a lime and cilantro and mix. Cover till ready to serve.
  • Towards the end of the 20 minute rice, start the vegetables.
  • Heat olive oil on medium heat.
  • Add sliced peppers and onions.
  • Add salt and pepper to taste.
  • Sauté for 7-10 minutes till almost stir-fried brown.
  • In nice sized bowl, add rice 1st, then hot vegetables on top, next add shredded cheese, sour cream and salsa.
  • Enjoy!

Chipotle Rice Casserole image

Steps:

  • Cook rice in water as directed on package. Meanwhile, heat oven to 350°F. Lightly spray 8-inch square (2-quart) glass baking dish with cooking spray. In large bowl, mix roasted peppers, beans, corn, diced tomatoes, cilantro, chipotle chiles, 1/2 cup of the cheese and the cooked rice.
  • In 2-quart saucepan, heat oil over low heat. Stir in flour, using wire whisk. Cook over medium heat, stirring constantly, until mixture is smooth and bubbly. Gradually stir in milk, broth, cumin and garlic salt. Heat to boiling, stirring constantly. Boil and stir about 1 minute or until slightly thickened. Stir into rice mixture in bowl. Spoon mixture into baking dish.
  • Bake 20 to 25 minutes or until bubbly around edges. Sprinkle with remaining 1/2 cup cheese. Arrange tomato slices on top. Bake 5 to 8 minutes longer or until cheese is melted.

Chipotle Pepper Spanish Rice image

Steps:

  • Heat oil in pan.
  • Add garlic and rice.
  • Brown garlic and rice for a couple of minutes on high.
  • Add bouillon cubes and water.
  • Let boil for a minute or two.
  • Add chipotle chili and adobo sauce.
  • Stir everything.
  • Cover pan with foil or pan lid.
  • Turn burner to low.
  • Let simmer for at least 20 minutes.
  • You should not need to add anymore water, but if the rice has soaked up the previous water you can add more if it makes you feel better.

Steps:

  • Flash boil dry beans for 5-10 min and then Soak them for 2-4 hours.
  • Cooking: Drain the soaked beans and add 4 cups of water to boil. Add 1 tbs salt in water. While beans are coming to a boil, in a separate pot add 3 cups of water, 1tbs salt, 1 tsp chipotle seasoning, and 1 cup of brown rice. Bring to boil and allow boiling at medium heat for 30 minutes. Combined your chopped vegetables and add half of them to the boiling beans, and half of them to the boiling rice. Continue to allow the beans to cook on medium heat for 30 minutes.   • Mix sour cream and 1 Tbsp. chipotle peppers. Cook and stir bacon in large skillet on medium heat until crisp. Remove bacon from skillet with slotted spoon; drain on paper towels. Reserve 2 tsp. drippings in skillet.
