ICED CHOCOLACCINO

If you have hot cocoa mix and freshly brewed coffee, this sweet, yummy drink could be in your future. Pour over coffee ice cubes, if you like. (We like!)

Steps:

  • Empty cocoa mix into large heatproof pitcher. Add coffee; stir until cocoa mix is completely dissolved. Refrigerate until ready to serve.
  • Serve over Coffee Ice Cubes (see Tip) in 4 tall glasses.

  • Shake all ingredients with ice in a cocktail shaker.

1 1/4 ounces dark creme de cocoa
1/2-ounce vanilla vodka

Steps:

  • Preheat oven to 325°F.
  • In a bowl whisk together flour, cocoa powder, baking powder, and salt.
  • In another bowl with an electric mixer beat together butte and sugar until light and fluffy and beat in rum. Beat in eggs, 1 at a time, beating well after each addition, Gradually beat in flour mixture and beat just until dough is blended well. Form scant 1/4-cup measures of dough into balls and arrange about 3 inches apart on lightly greased baking sheets.
  • Bake cookies in middle of oven in batches until tops begin to crack, about 15 minutes, and transfer with a metal spatula to racks to cool.

1/2 teaspoon salt
3 sticks (1 1/2 cups) unsalted butter, softened

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cream together the butter, white sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Dissolve baking soda in hot water. Add to batter along with salt. Stir in flour, chocolate chips, and nuts. Drop by large spoonfuls onto ungreased pans.
