Can't decide between cookies and confections? You don't have to! These chocolate-covered cookie balls feature a filling of cream cheese and crushed cookies.

- Mix cream cheese and cookie crumbs until well blended.
- Shape into 48 (1-inch) balls. Freeze 10 min. Dip balls in melted chocolate; place in single layer in shallow waxed paper-lined pan.
- Refrigerate 1 hour or until firm.

These cadies can be made as gifts anytime of the year. However, I think they would make a nice addition to your Christmas gift list and cookie tray. Paraffin can usually be found in the canning section of the store. Actually, hardware stores are the best place to find it.

Steps:
- In a large bowl, combine butter, powdered sugar, maraschino cherries, peanut butter, walnuts, coconut, and salt; shape into 1-inch balls.
- In the top of a double boiler over hot water, melt chocolate chips and paraffin wax.
- Insert a toothpick into each ball; dip into chocolate mixture to coat exterior.
- Place onto wax paper to set. Use another toothpick to push ball from inserted toothpick.
- If a hole remains where toothpick was inserted, add a small amount of chocolate coating to cover.

- Mix cream cheese and cookie crumbs until blended.
- Shape into 40 (1-1/4-inch) balls; press to flatten. Top each with cherry; wrap cream cheese mixture around cherry to completely enclose cherry. Re-roll into balls. Freeze 10 min.
- Mix melted chocolate and food coloring until blended. Dip balls in chocolate; place on waxed paper-covered rimmed baking sheet. Sprinkle with sugar. Refrigerate 1 hour or until firm.

CHOCOLATE COVERED OREO BALLS
Had these on Christmas Eve and thought Santa came early! Talk about simple - and sinful! These were extremely easy (and a lot of fun) to make. We used reduced fat ( ::gasp:: ) Oreos, and they were just as good. You could use low fat cream cheese as well. We also decided that covering the *entire* ball made them a bit too sweet (yes, I know - how can that be?!?). Next time, we will just dunk the bottoms in the chocolate. DH and I can't wait to try out different combinations: Peanut butter Oreos, mint Oreos, flavored chips, adding food coloring to white chocolate (for the holidays, game day, school colors, etc) - the creative possibilities are endless!

- Crush the Oreos to bits, either in a processor or plastic bag. You don't want a powder, but you don't want chunks.
- Mix the room temperature, softened cream cheese and Oreo bits together. If you use a hand mixer, be prepared for the mixture to get "stuck" in the paddles. We finished off using a spatula.
- Roll mixture into bite-sized (large grape/chestnut) pieces.
- Chill the balls on waxed paper for about an hour, or until firm to the touch.
- Melt the (white) chocolate chips in double boiler or in the microwave as instructed by the packaging.
- Stick a toothpick in each ball, then dip into the melted the (white) chocolate. Spin/roll excess off (slowly).
- Optional - If you want to add additional decorations such as sprinkles, etc - now is the time to do it.
- Allow to harden on wax paper, approximately 15-20 minutes.
- Optional - Drizzle with more chocolate and allow to harden again.
- Optional - Remove toothpick and refrigerate.

- Finely crush 36 Chocolate Creme Oreo cookies, will make about 3 cups. Then blend the cream cheese into the Oreos until completely mixed, will make a very mushy and creamy consistency. Make 1 inch balls out of the Oreo and cream cheese mixture, smoosh them flat and place one of the cherries inside, then smoosh the sides up around the cherry while rolling it back into a ball.
- While in the freezer, melt your chocolate bark as directed on the packaging. Dip the frozen Oreo balls into the chocolate mixture and then place back onto the wax paper. Melt a small bowl of dark chocolate chips in the microwave and then, using a fork, drizzle the dark chocolate over the Oreo balls.

- Mix crushed Oreo crumbs (I always use my blender to crush the cookies) with cream cheese, cherry pie filling and cherry extract until well combined.
- Roll dough into 1-inch balls and place on wax paper on a cookie sheet or plate. Freeze the balls for at least 30 minutes before dipping in chocolate.
- Once the balls have been frozen, melt the chocolate bark in a glass bowl in the microwave for about 45-second intervals, stirring in between each interval until all the chocolate has barely melted and is smooth when stirred. I also added a couple drops of cherry extract to the chocolate before dipping and it adds a little bit more a cherry taste. Just be careful not too use too much - it is very strong stuff!
- Dip each ball into the chocolate and then return to the wax paper until chocolate is hard. (I don't consider myself an expert at truffle-dipping, but I've tried several different methods and the one that seems to work best is using a fork to lift the truffle out of the chocolate once completely coated - this allows some of the excess chocolate to drip off before you place the truffle on the wax paper.)
