CARAMEL CHOCOLATE CORN
Caramel corn with roasted peanuts and chocolate. This will take a while to make, but is well worth it!

Steps:
- Grease cookie sheets.
- Place popcorn and peanuts in a paper bag. Set aside.
- In a microwave safe bowl, combine sugar, butter, corn syrup, vanilla and salt. Microwave 4 minutes, until bubbly. Stir in baking soda. Pour over popcorn mixture and shake bag to coat.
- Roll down edges of bag and place bag in microwave. Heat for 2 minutes, shaking three times to mix. Spread mixture onto prepared sheets to cool.
- In a microwave safe bowl, combine chocolate and shortening. Microwave 90 seconds, stirring once, until melted. Drizzle over popcorn mixture. Let cool before serving.

WHITE CHOCOLATE PEPPERMINT POPCORN

Steps:
- Line 2 baking sheets with waxed paper.
- Place the peppermint candies in a large resealable plastic bag. Crush with a rolling pin until you have a mix of smaller chunks and crumbs. Set aside.
- Place the white chocolate chips and coconut oil in a microwave-safe bowl. Microwave in increments of 15 to 30 seconds (this will depend on your microwave), stirring after each, until completely melted and smooth.
- Place the kettle corn in a large bowl. Pour the white chocolate mixture over the popcorn and fold with a spatula until evenly coated. Transfer the popcorn to the lined baking sheets in a single layer. Working quickly, sprinkle the popcorn with the crushed peppermint candies, mini chocolate chips, red and green sprinkles and red and green sanding sugar. You can you use more or less of each topping based on what you like.
- Allow the popcorn to dry to the touch, about 15 minutes, before packing in bags as gifts or storing in an airtight container.
CHOCOLATE DRIZZLED KETTLE CORN
Steps:
- For Kettle Corn: Heat the vegetable oil in a large pot over medium heat. Once hot, stir in the sugar and popcorn. Cover, and shake the pot constantly to keep the sugar from burning. Once the popping has slowed to once every 2 to 3 seconds, remove the pot from the heat and continue to shake for a few minutes until the popping has stopped. Pour into a large bowl, and allow to cool, stirring occasionally to break up large clumps. For Drizzle: Divide shortening between the two type of chocolate and Melt separately in a heat-proof bowl over a double boiler. Stir frequently and keep the heat low because the chocolate will burn easily. Dip a fork in the chocolate and drizzle it over the popcorn. Do the same with the white chocolate. Allow to set until dry. Break into pieces and store.
CHOCOLATE DRIZZLED CARAMEL CORN
This is so yummy! My girlfriend gave me the recipe and it sat in my cupboard for awhile and we tried it on a whim one year. Since then we included small bags of this is our Christmas gift baskets and people always rave about it. Sometimes we leave out the peanuts out and some times we leave the chocolate off. The popcorn without the chocolate is fabulous!

- Grease two large cookie sheets.
- Place popcorn and peanuts in large paper bag. Set aside.
- In a glass bowl, combine sugar, butter, corn syrup, vanilla and salt.
- Microwave for 4 minutes until bubbly.
- Stir in baking soda.
- Pour over the popcorn in the bag. Fold over the top of the bag and shake. Shake until the the coating is evenly distributed.
- Roll down the edges of the bag and place bag in the microwave for 2 minutes, stopping every 40 seconds and shaking to mix.
- Spread mixture onto prepared sheets to cool.
- In a small glass bowl, combine chocolate chips and shortening. Microwave 90 seconds, stirring once, until melted.
- Drizzle over popcorn mixture. Let cool.

- In a large pot with a tight-fitting lid, heat the coconut oil over medium-high heat. Add 3 kernels. When they pop and the is oil sizzling, sprinkle in the sugar. Immediately add the 1/2 cup of popcorn. Cover and shake the pot until the popping slows down, about 2-3 minutes. Be sure to continue to shake the pot so it doesn't burn.
- Remove from the heat and immediately pour onto wax lined baking sheets or baking mats. Make sure you do this step immediately or the popcorn will burn.

- Heat oil in large saucepan or frying pan over medium heat. Add one popcorn kernel. When that kernel pops, remove from pan and add the remaining popcorn kernels and sugar. Stir quickly to blend and cover with lid.
