Steps:

  • Heat oven to 350°F. Grease 13x9-inch pan. In small saucepan, cook caramels and milk over low heat until caramels are melted and smooth, stirring frequently.
  • In medium saucepan, melt butter over low heat. Remove from heat. Stir in sugar, vanilla and eggs. Stir in flour, cocoa and salt until well blended. Stir in 1 1/2 cups of the chocolate chunks and 1 cup of the pecans. Spoon and spread batter in pan.
  • Gently and evenly drizzle caramel filling over batter to prevent large pockets of caramel and to prevent caramel from reaching bottom of bars. (Caramel can cover entire surface of batter.)
  • Bake 35 to 40 minutes or until set.
  • In small saucepan, melt remaining 1/2 cup chocolate chunks with oil over low heat, stirring until smooth. Drizzle over warm brownies. Sprinkle with remaining 1/2 cup pecans; press in lightly. Cool 20 minutes. Refrigerate 1 hour 30 minutes or until chocolate is set. Cut into squares. If refrigerated longer, let stand at room temperature for 20 minutes before serving.

Steps:

  • Crust: Preheat oven to 350 degrees. Line a 9-inch square baking pan with parchment, leaving an overhang on all sides; butter parchment, excluding overhang. Beat butter and brown sugar on medium speed until pale and fluffy, about 3 minutes. Add flour and table salt, and beat until just combined.
  • Press dough evenly into pan, and bake until lightly browned, about 30 minutes.
  • Chocolate Caramel: Place chocolate in a medium bowl. Heat granulated sugar and water in a small saucepan over medium-high heat, washing sides of pan with a wet pastry brush to prevent sugar crystals from forming, until amber, 10 to 12 minutes. Remove from heat. Add butter, cream, and table salt. Bring to a boil, stirring until smooth. Pour over chocolate. Let stand for 2 minutes. Stir to combine, and let stand until cool, about 10 minutes.
  • Pour mixture over crust. Refrigerate at least 4 hours, or overnight. Run a knife around edges; lift parchment to remove whole bar from pan. Sprinkle with sea salt. Trim edges, and cut into 16 bars. Bars can be refrigerated for up to 3 days.

4 1/2 ounces (9 tablespoons) unsalted butter, room temperature, plus more for parchment
1/4 cup packed light-brown sugar
1 1/2 cups unbleached all-purpose flour
1/4 teaspoon table salt
10 1/2 ounces milk chocolate, chopped (2 cups)
1 1/2 cups granulated sugar
1/4 cup water
3 ounces (6 tablespoons) unsalted butter
1 cup heavy cream
1/2 teaspoon table salt
1 tablespoon sea salt, preferably fleur de sel

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Generously grease or spray bottom and sides of 13x9-inch pan. In large bowl, beat cake mix, butter and egg with electric mixer on low speed until well mixed.
  • Stir in oats until crumbly (use fingers if necessary). Reserve 1 cup cake mixture. Press remaining mixture in pan (use plastic wrap or waxed paper to press mixture if it is sticky).
  • In heavy 2-quart saucepan, heat caramels and milk over medium-low heat, stirring frequently, until melted. Pour over chocolate layer in pan. Sprinkle with chocolate chips and pecans. Crumble reserved cake mixture into small pieces; sprinkle over top.
  • Bake 24 to 29 minutes or until caramel bubbles along edges and cake mixture on top appears crisp and dry. Run knife around sides of pan to loosen bars. Cool completely, about 1 hour 30 minutes. For bars, cut into 6 rows by 4 rows. Store tightly covered.

OATMEAL CHOCOLATE FUDGE BARS

This is an adopted recipe that uses regular pantry ingredients for a simple and rich treat. Very easy and quick to put together, but you need to give them some time out of the oven to firm up.

Oatmeal Chocolate Fudge Bars image

Steps:

  • Preheat oven to 350°.
  • Cream butter, sugar and salt in a mixer.
  • Add flour and oatmeal, blend until it holds together.
  • Heat milk in a pan and add chocolate chips.
  • Use low heat and stir until the chips are melted and you have a smooth chocolate cream.
  • Using a 9x13 pan, press 3/4 of the dough mixture in the pan, spreading and patting it to cover the whole surface.
  • Pour chocolate cream over crust.
  • Crumble last bit of dough over the chocolate, creating a third spotty layer.
  • Bake for 30 minutes, until lightly browned.
  • Cool, cut, transfer to a wax paper lined tray and allow to firm up a bit before serving- I leave them for a few hours and they become fudge-like, but they are still yummy if you eat them sooner than that.
  • You can also use a smaller pan- I have used a 10" square and just baked a little longer for a thicker bar, which required a longer cooling time as well.
  • Note: removing to the wax paper is necessary-- if you cool them too long in the pan they are hard to remove, as the bottom crust tends to stick to the pan.

  • Ideally, use two pots to make this fudge, going at the exact same time. One for the Chocolate Fudge and one for the Caramel Swirl. Usually, I start the Caramel Swirl first because it generally takes a bit longer. Your goal is to have both done around the same time so you can pour one in to the pan right after the other.
  • Prepare and measure all of your ingredients. If you are unable to find baking caramels grab square caramels, peel off the plastic and cut them in half twice, or into quarters, for easier melting.
  • In another saucepan, over low heat, pour in sweetened condensed milk. Once hot, but not boiling, add chocolate chips, and butter, stirring frequently, until smooth and creamy. If mixture starts to boil remove pot from heat for a moment, stir and return to heat.
