CHOCOLATE CHIP BISCUITS-AUSSIE STYLE
These are a very "moresome" bikky:) I used to sell these at the local markets, and they always sold out first. Very easy to make, and to really show off, you can throw a handful of chopped macadamia nuts in, gives them an extra crunch!!! PLEASE NOTE, THESE ARE NOTHING LIKE AMERICAN CHOC CHIP COOKIES, WHICH ARE SOFT AND CHEWY. I have also added coco powder to the mix and used white chips, looks good, but the white chips stay very hard.

Steps:
- Cream together the butter and sugar.
- Add the condensed milk and keep beating for 2 minutes.
- Fold through the flour, then the choc chips. The mixture will be tacky.
- Place teaspoons full on your baking tray (either greased or baking pepper).
- Flatten slightly with a floured fork.
- Bake at ABOUT (all stoves are different) 160°C for about 15 minutes, or till golden.
- Leave on trays for 3 minutes, then cool on wire racks.

CHOCOLATE MICE
Kids will love these, they are whimsical and fun. Cute chocolate mice rolled in confectioners' sugar or chocolate cookie crumbs are very realistic.

Steps:
- Melt the chocolate, and combine with sour cream. Stir in 1 cup chocolate cookie crumbs. Cover and refrigerate until firm.
- Roll by level tablespoonfuls into balls. Mold to a slight point at one end (the nose).
- Roll dough in confectioners sugar (for white mice), and in chocolate cookie crumbs (for dark mice). On each mouse, place dragees in appropriate spot for eyes, almond slices for ears, and a licorice string for the tail.
- Refrigerate for at least two hours, until firm.

CHOCOLATE CHERRY MICE
Steps:
- Put the maraschino cherries in a strainer and rinse well with cold water until it runs clear. Scatter the cherries on top of a few layers of paper towel to drain and dry thoroughly, patting dry if necessary. Line a baking sheet with parchment paper.
- Melt together the chopped chocolate and coconut oil in a bowl set over a pan of slightly simmering water, stirring until uniform and completely melted. Remove the bowl from the heat.
- Holding a cherry by the stem, dip in the melted chocolate, rolling to coat completely. Allow excess chocolate to drain off before placing the cherry on its side on the parchment-lined baking sheet (the stem should stick out from the side rather than the top). Repeat with the remaining cherries and chocolate. Place the baking sheet in the refrigerator for 30 minutes to allow to set.
- If the remaining chocolate mixture in the bowl has hardened, reheat over simmering water until melted again. Remove the chocolate-covered cherries from the refrigerator. Dip the flat end of a chocolate kiss into the melted chocolate, allowing excess to drain off, and then place onto the end opposite the stem end of a cherry. While holding the kiss in place, add 2 almond slices between the cherry and kiss to form ears. Use a toothpick to add 2 small dots of melted chocolate to the kiss, to adhere 2 dragees for eyes. Repeat with the remaining ingredients.
- Place the baking sheet back in the refrigerator to set up for at least 15 minutes.

- In a microwave, melt chocolate chips; stir until smooth. Stir in 1 cup wafer crumbs and sour cream. Refrigerate, covered, 1 hour or until firm enough to shape., Place remaining wafer crumbs in a shallow bowl. For each mouse, roll about 1 tablespoon crumb mixture into a ball; taper one end to resemble a mouse. Roll in wafer crumbs to coat. Attach nonpareils for eyes, sliced almonds for ears and licorice pieces for tails. Store in an airtight container in the refrigerator.

EASY NO BAKE MICE COOKIES
These cookies are the cutest things I have ever seen! I make them every year at Christmas, and people just rave! They are easy to make and you can make them while something else is baking in the oven, because you don't bake them, just assemble and enjoy! Kids LOVE these!

- Preparations:.
- Take apart the Oreo Cookies and keep only the side with the white cream.
- Unwrap chocolate kisses and set aside.
- Drain cherries and dry on a paper towel.
- Assembly:.
- Melt chocolate until nice and smooth.
- Dip a cherry in chocolate until coated and set on the Oreo with the stem going side ways (it's the body & tail).
- Place a chocolate kiss, pointed side out on the opposite side of the cherry (it's the nose).
- Place two almond halves on top of the cherry (they're the ears).
- Put two red dots on the cherry body.(They're the eyes).
- You can make cute designs on the white part of the cookie with the gel.(I always make red and green holly with berries!).
- These are eaten by picking them up by the tail and eating in one big bite! Tastes like chocolate covered cherries!
