CHOCOLATE PEANUT BUTTER CAKE
Steps:
- For the cake: Preheat the oven to 350 degrees F. Coat three 6-inch-round cake pans with cooking spray.
- Sift the flour, granulated sugar, cocoa powder, baking soda, baking powder and salt into a large bowl. Mix with an electric mixer at medium speed for 1 minute. Add the buttermilk, coffee, vegetable oil and eggs. Mix at medium speed for 1 minute. Scrape the side and bottom of the bowl and mix on medium speed for 1 minute more. Divide the cake batter evenly among the prepared pans. Bake on the top rack until a toothpick inserted in the center of the cakes comes out clean, about 30 minutes.
- Cool the cakes in the pans for 20 minutes then turn out onto wire racks to cool completely.
- For the buttercream: Add the confectioners' sugar and butter to a large mixing bowl. Beat with an electric mixer on low speed until completely incorporated, 1 to 2 minutes. Add the peanut butter, milk and salt. Mix on high speed until the mixture becomes fluffy and lighter in color, about 2 minutes. Scrape the side and bottom of the bowl and mix again on high speed for 1 minute.
- To assemble the cake: Level each cake round with a serrated knife or cake leveler. Use an offset spatula to spread a thin layer of the buttercream on top of one round. Top with a second round and spread it with a thin layer of buttercream. Repeat with the third round, spreading the buttercream on the top and sides of the cake. Smooth with a bench scraper.

CHOCOLATE-PEANUT BUTTER SHEET CAKE
This sweet and simple sheet cake marries two great flavors that just plain belong together: rich and tender chocolate cake, and creamy peanut-butter frosting. For maximum fluff, go for a classic smooth variety of peanut butter, and plug in your mixer-manpower alone won't be enough. Scatter chopped peanuts along the edges for any crunchy fans in the house.

Steps:
- Cake: Preheat oven to 350°F. Brush a 9-by-13-inch or 8-by-12-inch baking pan with butter. Line with parchment, leaving a 2-inch overhang on long sides. Butter parchment.
- Whisk together flour, cocoa, baking powder, and salt. Combine eggs and granulated sugar in the bowl of a mixer fitted with the whisk attachment. Beat on high speed until thick and pale, about 4 minutes. Add flour mixture; beat just to combine. Add butter and vanilla; beat to combine. Add sour cream; beat until smooth.
- Scrape batter into prepared pan, smoothing top with a spatula. Bake until top springs back when lightly touched and a tester inserted in center comes out clean, 30 to 35 minutes (for 9-by-13-inch) or about 40 minutes (for 8-by-12).
- Let cool in pan on a wire rack 10 minutes. Using parchment overhangs, lift cake out of pan and let cool completely on rack. (Cake can be made to this point and stored at room temperature, wrapped in plastic, up to 1 day.)
- Frosting: Beat butter and peanut butter on medium-high speed until light and fluffy, about 2 minutes. Beat in confectioners' sugar until thick and fluffy. Remove from mixer; stir in sour cream by hand until frosting is silky and dense. Spread over cake; sprinkle top with peanuts. Frosted cake is best the day it's assembled, but can be refrigerated, wrapped in plastic, up to 1 day. Return to room temperature before serving.

- For the cake, adjust an oven rack to the middle position and heat the oven to 350 degrees F . Coat an 8-inch-square baking pan with nonstick cooking spray.
- Whisk the flour, sugar, cocoa, baking soda, and salt together in the baking pan. Make 1 large and 2 small craters in the dry ingredients. Add the oil to the large crater and vinegar and vanilla separately to the remaining small craters. Pour the water into the pan and mix until just a few streaks of flour remain. Use a rubber spatula to spread the batter evenly in the pan if it isn’t level after mixing. Immediately put the pan in the oven.
- Bake until a toothpick inserted in the center of the cake comes out with a few moist crumbs attached, about 23-25 minutes. Don’t overbake or the cake will be dry! Remove from the oven and let the cake cool completely in the pan set on a wire rack.
- For the buttercream, combine the sugar and egg whites in a medium metal or glass bowl set over a saucepan of simmering water. Whisk constantly until the sugar dissolves and the mixture is hot to the touch, 3–4 minutes. Remove the bowl from off the saucepan and using an electric mixer, beat on high speed until the mixture is cool and thick, 5–6 minutes. Beat in the vanilla, then the peanut butter. With the mixer running, add butter a few pieces at a time, beating to blend between additions. Season with a pinch of salt, if desired (I didn't add any additional salt to my frosting since I used salted butter). The frosting will be much softer and less set-up than a traditional buttercream made with butter and powdered sugar. If it seems overly runny, refrigerate the frosting for an hour or so to help it firm up - but keep in mind that this isn't a frosting to pipe with, it is meant to be soft and creamy. It has the finished texture of cream whipped to soft peaks.
