BERRY SHORTBREAD DREAMS

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy, about 5 minutes. Beat in extract; gradually add flour until dough forms a ball. Cover and refrigerate until dough is easy to handle, 1 hour. , Preheat oven to 350°. Roll into 1-in. balls. Place 1 in. apart on ungreased baking sheets. Using the end of a wooden spoon handle, make an indentation in the center. Fill with jam., Bake until edges are lightly browned, 14-18 minutes. Remove to wire racks to cool. , If desired, spoon additional jam into cookies. Combine confectioners' sugar, extract and enough water to achieve drizzling consistency; drizzle over cookies.

This is a delicious bar cookie with a raspberry and chocolate layer between a shortbread bottom layer and a crumb topping top layer. These are Christmas tradition at our house.

Steps:

  • Combine shortbread layer ingredients with a fork or food processor until crumbly.
  • Press into the bottom of a buttered 9x13 baking dish.
  • Bake for 20-25 minutes at 350*, until lightly browned. Remove and let cool for 10 -15 minutes.
  • Then spread the jam over the baked shortbread layer.
  • Sprinkle chocolate chips over jam layer.
  • Combine Crumb topping ingredients with a fork or food processor until crumbly then sprinkle over chocolate chip layer.
  • Bake at 350* for 15-20 minutes. Until top layer is lightly browned.

Steps:

  • Combine graham cracker crumbs, brown sugar, and cinnamon in a bowl; stir in melted butter. Set aside 1/2 cup of graham cracker mixture; press remaining mixture into a 9x13-inch dish. Chill crust until firm, about 30 minutes.
  • Beat cream cheese, confectioners' sugar, and 1 teaspoon vanilla extract together in a bowl until soft and fluffy. Spread cream cheese mixture over graham cracker crust and chill until firm, about 30 more minutes.
  • Whisk raspberry gelatin and boiling water together in a separate large bowl until gelatin has dissolved; stir in lemon juice. Gently fold frozen raspberries into warm gelatin; cold raspberries will cause gelatin to begin to set. Spread raspberry mixture over cream cheese layer in pan.
  • Spread whipped topping over raspberries and sprinkle dessert with reserved crumb topping. Chill at least 2 more hours.

Chocolate-Raspberry Cream Cake image

Steps:

  • With sharp knife, carefully slice off rounded top of 1 cooled, baked cake layer, creating a flat surface. Gently transfer cake layer to plate.
  • In medium bowl, beat 1 1/2 cups cream with electric mixer on high speed until light and fluffy. Reserve 1 raspberry for garnish; add remaining raspberries and the powdered sugar to cream. Beat on low speed just until folded together.
  • Using metal spatula, spread raspberry-cream mixture on top of cake layer on plate, spreading to edge. Top gently with second cake layer. Run spatula around edge of cake to smooth cream layer.
  • In medium microwavable bowl, microwave chocolate ganache ingredients on High 1 minute; stir until creamy. If chocolate is not completely melted, microwave 30 to 60 seconds longer. Spoon ganache over top of cake, allowing some to run down side.
  • Place 1 raspberry in center of cake. Allow ganache to harden at room temperature before serving. If not serving for more than 30 minutes, cover cake gently and store in refrigerator until ready to serve.

Steps:

  • Cake: Preheat oven to 350 degrees F. Grease and flour a 9-inch round cake pan. In large bowl cream together butter and sugar. Beat in egg with hand held Wisk or electric mixer. Add flour, milk and beat to a smooth batter. Fold in semi-sweet Chocolate Chips. Pour batter into pan and bake 20 minutes or until toothpick inserted in center comes out clean. Allow cooling completely. Whipped topping: In large metal bowl or standing mixer bowl: stir together Unsweetened Cocoa and sugar. Add whipping cream and beat on medium speed with electric mixer, scraping bowl occasionally, until mixture is stiff. Chocolate Curls: Place wrapped semi-sweet Chocolate Bar on top of a warm stove toward the back (not on a burner) for about 2-3 minutes, just to lightly soften it. Place a cutting board half way over a large bowl and place unwrapped chocolate slightly over edge of cutting board. Drag a sharp vegetable peeler down one side of the chocolate in one motion from top to bottom so you create curls. Refrigerate until ready to use. Place cooled cake on serving plate. Place raspberries on top of cake and top with whipped chocolate topping. Gently tip bowl of chocolate curls over whipped topping. Place a few raspberries in center. Refrigerate until ready to serve. 8 Servings

Steps:

  • Mix the raspberries with the brandy, if using, and raspberry conserve, then spoon into the base of 6 glasses.
  • Break the chocolate into a Pyrex bowl, then melt in the microwave on High for 1-2 mins, or place the bowl over a pan of simmering water and stir until melted. 3 Stir the yogurt and custard into the melted chocolate, then spoon on top of the berries. Cover and chill until ready to serve, then top with grated dark chocolate.
  • To make the chocolate macaroons, heat oven to 190C/fan 170C/gas 5, then line a baking sheet with baking parchment. Whisk 2 egg whites until stiff, then gradually whisk in 50g icing sugar until thick and glossy. Mix 100g ground almonds and 25g cocoa with another 50g icing sugar, then stir into the egg white mixture. Divide the mix into 12, wet your hands, then shape each piece into a ball. Place spaced apart and slightly flattened on the baking sheet. Top each with a blanched almond, then bake for 10 mins until firm, but still soft in the centre. Cool. Dust with icing sugar. Can be made 2 days ahead and kept in an airtight container.
