NO-MELT SUNDAE PIE
Pull this out of the freezer on a hot day for a super-cool, creamy treat with chocolate sandwich cookie crust and chocolate drizzles...minus the drip.

- Combine cookie crumbs and butter; press onto bottom and up side of 9-inch pie plate. Reserve 1/2 cup COOL WHIP; refrigerate until ready to use.
- Beat pudding mix and 2% milk in medium bowl with whisk 2 min. Stir in remaining COOL WHIP; spoon into crust. Mix melted chocolate and condensed milk; spoon over pie. Swirl gently with knife.
- Freeze 6 hours or until firm. Let pie stand at room temperature 15 min. before serving to soften slightly. Top with reserved COOL WHIP.

HOT FUDGE AND SALTED CHOCOLATE BITS SUNDAE
Sundaes are the chamber music of the dessert world. Their composition and construction follow the contours of grand works, but mostly they're played out in miniature, their delights designed to be shared by a duet or an audience of one, long spoon in hand. The composition of this sundae is classic. There's ice cream - the flavors of your choice in whatever quantities you want; sauce -homemade hot fudge sauce based on dark chocolate (not chips, please); fresh whipped cream; and two different add-ins, toasted slivered almonds and chopped chocolate bits. It's the bits that are the big surprise - they're bittersweet chocolate and salt, melted together, frozen and then cut into morsels. The salt is unexpected, but not dissonant - it's what brings out the best in the sundae's other players.

- To make the bits: Line a pie plate with plastic wrap. Melt the chocolate in a double boiler or on low power in a microwave. Add the salt, stir to blend and then, using a spatula, spread the chocolate on the plastic, making a layer that's 1/8-inch thick (shape doesn't matter). Press a piece of plastic wrap against the surface and freeze for at least 45 minutes. When you're ready to make the sundaes, chop the chocolate into bite-size bits.
- To make the sauce: Put the chocolate, cream, corn syrup and sugar in a medium pan over medium-low heat. Cook, stirring constantly, until the chocolate melts and comes to a light simmer, about 5 minutes. Still stirring, let it burble for a minute or two, then scrape it into a heatproof container. Use immediately, or cover and refrigerate until needed.
- To make the sundaes: If necessary, warm the fudge sauce in a double boiler, or microwave on low. For each sundae, sprinkle some salted chocolate bits and almonds in the bottom of a bowl, snifter or sundae glass. Top with a scoop or two of coffee ice cream, some hot fudge sauce, almonds and bits. Finish with a scoop or two of vanilla ice cream, fudge sauce, whipped cream, almonds and chocolate bits. Serve immediately with a long spoon.

- 1. 1.Whip the cream cheese until softened. 2. 2 Blend in powdered sugar, cool-whip 3. 3 Put into crust and smooth out top. 4. 4 Make pudding as directed on box for a pie, using only 1 1/2 cups of milk. 5. 5 Top pie with pudding mixture and smooth out top. 6. 6 Finish with Cool Whip and chocolate curls. 7. 7 Refrigerate until set.

- MIX crumbs and butter; press onto bottom and up side of 9-inch pie plate.
- Reserve 1/2 cup whipped topping; refrigerate.
- POUR milk into large bowl. Add dry pudding mix. Beat with wire whisk 2 minute or until well blended.
- Gently stir in remaining whipped topping. Spoon into crust.
- Mix melted chocolate and condensed milk until well blended. Spoon over pie.
- Cut through chocolate mixture several times with knife for marble effect.
- FREEZE 6 hours or until firm. Remove pie from freezer 15 minute before serving. Top with reserved whipped topping.

- Preheat oven to 375 degrees F (190 degrees C).
- In a medium bowl, mix together chocolate wafer crumbs, chopped walnuts, and softened butter until thoroughly combined. Press mixture firmly into bottom and sides of a 9 inch pie pan. Bake in preheated oven for 7 minutes. Refrigerate until well chilled.
- In a medium bowl, whip together whipping cream and confectioners' sugar until soft peaks form. Spread half of ice cream into bottom of crust. Cover with strawberries, then cover strawberries with remaining ice cream. Spread whipped cream over ice cream, and garnish with walnut halves. Freeze for 2 hours before serving. Allow to stand at room temperature for 10 minutes before slicing.

- In a large saucepan, combine 1/4 cup corn syrup, butter and brown sugar. Bring to a boil; cook and stir for 1 minute., Remove from the heat; stir in cereal until blended. Press into a greased 9-in. pie plate., In a small bowl, combine the peanut butter, hot fudge topping and remaining corn syrup. Set aside 1/3 cup for topping. - Preheat oven to 350.
- Cookies:.
- Mix together flour, baking soda, and salt, set aside.
- With your mixer, mix brown sugar and shortening.
- Blend in egg. Beat well, then stir in 1/2 of the dry ingredients.
- Add Marachino juice and milk.
- Stir in the rest of dry ingredients, and mix well.
- Blend in melted unsweetened chocolate (you can use the kind that are already melted, or substitute 6 T. of cocoa and 2 T. oil), chopped cherries, and chopped walnuts.
- Drop by spoonfuls on an ungreased cookie sheet.
- Bake for 12-15 minutes.
- While cookies are baking cut large marshmallows in half.
- Place the cut side of the marshmallow down on hot cookies when they come out of the oven, so they will stick.
- Let cool.
- Frost cookies, then and put a nut on top.
- Buttercream Chocolate Frosting:
- Beat cocoa, margarine, milk and vanilla well. Add in confectionary sugar to desired consistency.
