CHOCOLATE TIDBITS
Chocolaty, oaty, coconut fun. My kids eat them faster than I can get them out of the pot given the chance. I grew up eating these, my grandmother made them like a ritual, my husbands mother made them... Apparently the recipe came originally from a school penny sale cookbook...

Steps:
- Combine butter, milk, and sugar in a heavy bottomed saucepan and over medium-high heat bring just to the boil.
- Remove from heat.
- Add remaining ingredients to the pot and stir until completely combined.
- Drop by heaping teaspoonfuls onto waxed paper lined cookie sheets, and allow to cool for at least one hour at room temperature.
- Store in an airtight tin at room temperature for up to week, or freeze for up to a month, defrost at room temp for several hours before serving.
- (Not that they have ever lasted that long in my house).
CHOCOLATE TOFFEE BITES
Notes: This is a great way to get your chocolate fix in warm weather since the chocolate is stirred into the toffee and so no melting on the fingers! It's great to snack on and nice at the end of a meal with coffee. I learned this from the head pastry chef at Valrhona Chocolates.

Steps:
- Place the sugar in a heavy-bottomed saucepan and caramelize on high heat stirring constantly. It will turn amber brown in about 5 minutes. When it is a uniform caramel color, add the butter, and stir it in. Once mostly combined, add the chocolate, and stir to blend. Pour it out onto a silpat or parchment lined sheet pan, and spread it with an offset spatula 1/8-inch thick. Let cool and break into small pieces. Store in an airtight container.
NO-BAKE ENERGY BITES
This is a healthy take on the traditional no bake cookies. So good and good for you! I am always asked for this recipe every time I make them. They are a hit with the kids and the adults, and always go quick! I store them in the freezer because I think they taste best frozen, but not necessary.

- In a large greased roasting pan, combine the popcorn, tortilla chips, cereal and nuts. , In a small saucepan, combine the remaining ingredients. Bring to a boil, stirring constantly. Pour over popcorn mixture and toss to coat., Bake, uncovered, at 250° for 1 hour, stirring every 20 minutes. Cool on waxed paper. Store in an airtight container.
