- In a large bowl, combine the first 6 ingredients. Add the turkey, cabbage, celery and green onions; toss to combine. Cover and chill for several hours. Just before serving, add the chow mein noodles, almonds and sesame seeds; toss to combine.

- Bring a large pot of water to a boil; cook noodles, stirring occasionally, until tender, about 6 minutes. Drain and toss with 1 teaspoon sesame oil.
- Heat remaining sesame oil in a large saucepan over medium heat. Add turkey, onion, and garlic to the hot oil. Cook, stirring occasionally, until ground turkey is no longer pink, about 5 minutes. Drain excess grease and return to the pan.
- Pour in chicken broth, water chestnuts, soy sauce, and onion soup mix. Stir until well combined. Add celery, snap peas, and bell pepper. Cook and stir until slightly softened, 3 to 5 minutes.
- Add noodles and bean sprouts to the pan. Stir to combine and serve immediately, topped with red pepper flakes.

I thought I would start out with one of my simple recipes. Here is an easy skillet meal to help use up all that leftover holiday turkey we all have. Of course, you can substitute chicken or pork also.

- In a large skillet, cook onion in oil over medium heat about 5 minutes.
- Add celery and garlic and cook 5 minutes more.
- Add turkey, mixed vegetables, broth and peas; cover and cook 5 minutes.

- Turn heat up to medium high.
- Cook, stirring constantly 2 to 3 minutes until sauce is boiling and thickened.

- Saute sliced carrots and celery until just tender/crisp.
- Add broth but reserve about a cup of broth for corn starch.
- Add corn, water chestnuts and ginger.
- Mix cornstarch and reserved broth and pour it into the Chow Mein, it may take more or less than the 1/2 cup of corn starch.It can be mixed with the reserved broth or to water if you need more thickening.
- Add soy sauce to taste and then add turkey and bean sprouts. I like a lot of bean sprouts so I usually add more than 12 oz.
- Heat until thick and bubbly!
- Serve with rice or chinese chow Mein Noolles.

- Cook 225g egg noodles in a large pan of boiling water for 3-5 mins, then drain and put them in cold water. Drain thoroughly, toss them with 1 tbsp sesame oil and set aside.
- Combine 100g chicken breasts, cut into fine shreds, with 2 tsp light soy sauce, 2 tsp Shaohsing rice wine or dry sherry, 1 tsp sesame oil, ½ tsp white pepper and ½ tsp salt for the marinade, mix well and then leave to marinate for about 10 mins.
- Heat a wok over a high heat. Add 1 tbsp groundnut oil and, when it is very hot and slightly smoking, add the chicken shreds.
- Stir-fry for about 2 mins and then transfer to a plate.
- Wipe the wok clean, reheat until it is very hot then add 1½ tbsp groundnut oil.
- When the oil is slightly smoking, add the 2 finely chopped garlic cloves and stir-fry for 10 seconds.
- Add 50g finely shredded mangetout and 50g finely shredded prosciutto, and stir-fry for about 1 min.
- Add the noodles, 2 tsp light soy sauce, 2 tsp dark soy sauce,1 tbsp Shaohsing rice wine or dry sherry, ½ tsp white pepper, ½ tsp golden caster sugar, 2 finely chopped spring onions and 1 tsp salt.
- Stir-fry for 2 mins. Return the chicken and any juices to the noodle mixture. Stir-fry for about 3-4 mins or until the chicken is cooked.
- Add 1 tsp sesame oil and give the mixture a few final stirs. Put on a warm platter and serve immediately.
