CHRISTMAS SHRIMP CURRY

Steps:
- Melt butter in a double boiler. Add onion. Simmer until tender. Stir in flour and other dry ingredients. Gradually stir in chicken broth and milk. Cook over boiling water, stirring until thickened. (Could be 10 minutes.) Add shrimp and lemon juice. Heat to serving temperature. (Be sure not to heat too long or shrimp will over-cook and turn to rubber.) Serve over fluffy rice with two or more accompaniments on top: chutney, shredded coconut, diced bananas, sliced avocado, pineapple chunks, bacon bits, salted almonds, Spanish peanuts or currant jelly.
CHRISTMAS EVE SHRIMP

- Place the shrimp in a mainade container. Add the oil and fresh squeezed lemon juice. Add the rest of the ingredients and give a good toss. Marinate in refrigerator overnight, turning several times. Remove from refrigerator 30-40 minutes before serving. Stir and serve.
FRIED SHRIMP IN ATOMICOCKTAIL SAUCE

- In a large bowl whisk together the eggs, buttermilk, flour, pepper and 1 teaspoon salt. Add the shrimp and let it chill out in the fridge for at most 30 minutes.
- Preheat the oven to 200 degrees F. Heat the oil to 350 degrees F in a deep-fryer or Dutch oven. Fit a sheet pan with a rack.
- In a wide shallow bowl or baking dish, whisk together the breadcrumbs, cornmeal, garlic, paprika, cayenne and remaining 1/2 teaspoon salt.
- Working in batches, use tongs to transfer the shrimp from the buttermilk mixture to the breading mixture. Make sure the shrimp is completely coated. Holding the shrimp by the tails, gently drop into the oil, one at a time. Fry in batches until golden brown, about 2 minutes per batch, allowing the oil to return to 350 degrees F between batches. Transfer the shrimp to the prepared sheet pan. Keep the shrimp warm in the oven.
- Serve with the AtomiCocktail Sauce and lemon wedges.
- Mix the ketchup, horseradish, pepper, lemon juice, Worcestershire sauce and fish sauce in a bowl. Chill for at least 1 hour before serving.

- Cook linguine according to package directions. Meanwhile, in a Dutch oven, saute the peppers, onion, garlic and seasonings in oil until vegetables are tender., Add the shrimp; cook and stir 2-3 minutes longer or until heated through. CHRISTMAS EVE FETTUCINI ALFREDO AND SHRIMP
I came up with this recipe when I was in a hurry and hadn't planned anything for dinner. It's quick and super delicious. My husband and I love it especially on the night before Christmas when the kids are finally in bed and it's just him and I. Enjoy!

Steps:
- 1. Boil water with a dash of salt for your pasta - you can add some olive oil so the pasta does not stick. Add Pasta when water has come to a boil. With a pasta fork gently stir pasta so it does not stick.
- 2. While pasta is cooking, in a large saute pan, melt butter and saute your garlic(do not let it burn).
- 3. Add Heavy Cream and your 2 Cups of Cheese...let it come up to a slow simmer until it thickens. Take off flame once it has reached your desired thickness.
- 4. Add Shrimp and 1 cup of thawed peas to your Alfredo sauce. Let stand until your pasta is ready. Your shrimp should be opaque, nice and pink by the time you add it to the pasta.
- 5. Once pasta is cooked, drain it and place pasta back in pot. Add your shrimp and Alfredo sauce to the pasta. Gently incorporate the sauce and pasta - gently with a pair of tongs.
- 6. Last and most important step....ENJOY!!
