THE BEST HAM GLAZE
A perfectly glazed ham is often the centerpiece of many holiday celebrations, including Easter and Christmas. Guests swoon over the juicy, savory slices on their plate. The most beautiful ham will have a tangy, sticky-sweet and shiny glaze. After tinkering with many ingredients, we landed on a knock-your-socks-off combination that includes brown sugar, maple syrup, cinnamon and cloves for sweet, warm and slightly smoky notes. Dijon and a splash of apple cider vinegar add tang and zip while soy sauce gives it a great depth of flavor. Rounding out the glaze with brightness are the zest and juice of an orange. We hoped to only brush the ham once during baking, but test after test proved that glazing two more times during the last 30 minutes in the oven brings out the best flavors and creates the most magical sheen.

Steps:
- Preheat the oven to 325 degrees F. Let the ham sit at room temperature for 30 minutes and trim off any skin. If your ham is not a spiral-cut ham, use a sharp paring knife to score through the fat in a diagonal crosshatch pattern without cutting through to the meat.
- Place the ham, flat side down, on a roasting rack in a roasting pan. Pour 1 cup water into the pan. Bake until a thermometer inserted into the thickest part of the ham registers 130 degrees F, about 2 hours 30 minutes (about 15 minutes per pound-reduce the time to 10 minutes per pound for a spiral-cut ham).
- Meanwhile, make the glaze: Whisk the brown sugar, maple syrup, soy sauce, orange zest and juice, Dijon, vinegar, cinnamon, cloves, onion powder and a few grinds of black pepper in a medium saucepan until smooth. Bring to a boil over medium-high heat, whisking occasionally, then reduce the heat to low and simmer until the glaze has thickened and reduced by half (you should have 1 cup glaze), 20 to 25 minutes. Set aside until the ham is ready.
- Increase the oven temperature to 425 degrees F. Brush half of the glaze over the ham. If the water in the bottom of the pan has evaporated, add 1 cup water. Return the ham to the oven and roast for 30 minutes, brushing with the remaining glaze every 10 minutes (two more times) before returning to the oven.
- Let the ham cool for 15 minutes before thinly slicing.

MOLASSES GLAZE FOR HOLIDAY HAM
From my Aunt Alta's recipe collection. My first memory of my Aunt Alta is visiting at her house in Illinois when I was a young girl, when she served us a huge holiday ham dinner(even though we were visiting her in the summer). I had never had a ham before, since my mother never served pork dishes in our house. I loved it and now I make a holiday ham for Christmas each year. She decorated the ham with pineapple rings and maraschino cherries place into the center of each ring, using whole cloves to pin them into place. I am guessing on the size of the ham here - her instructions were only for a half ham or a whole ham. Since the ham is to be a precooked one, the cook time is really just to fully heat the ham and cook the glaze, so use the appropriate heating time that your ham wrapper indicates for the size ham you have purchased. If your wrapper suggests a different temperature as well, then use that temperature, adjusting it to fit the recipe temp only after adding the glaze. I recently inherited my Aunt's recipes, and this was buried in her recipe files, splattered and crinkled and torn at the edges. She originally got the recipe from the back of a molasses bottle. I serve this with a hot fruit sauce on the side as a "gravy."

Steps:
- Preheat oven to 325°F.
- Remove rind from ham and score the fat with a sharp kife, creating diamond shapes all over the surface.
- Stud ham with cloves (and pineapple & cherries, if desired- attach with either toothpicks or cloves).
- Place ham in roasting pan so that the wide flat cut side is down.
- Bake 2 1/2-3 hours for a whole ham, 1 3/4-2 hours for a half ham (or use the heating instructions provided on your ham wrapper, changing the cook temp if necessary as well).
- Mix dry mustard powder with the molasses and brush all over ham 30 minutes before the ham is done, returning ham to oven to contiune cooking at 325°F.
- TIP: Do not baste ham with pan drippings as this will make the glaze look dull.
- Once ham is cooked, let rest 10 minutes before carving.
- Do not eat the cloves- they provide flavoring as they bake, but should be discarded after cooking.

- Select your ham. How much do you need? For bone-in ham, allow about 1/2 pound per person. Going with boneless? Buy 1/3 pound of ham per person. So, for a party of 12, you’d need a 6-pound bone-in ham or 4 pounds of boneless.
- Prep the ham. Place the ham on a roasting rack in a baking pan. Using a sharp knife, score surface of ham with 1/4-in.- deep cuts in a diamond pattern. This helps the yummy glaze soak into and infuse the ham with flavor.
- Clove it…or leave it. Cloves are optional, but they add a lovely aroma as the ham bakes, as well as an old-fashioned appearance. If you like the idea, insert a whole clove into each diamond point of the ham.
- Bake away. Cover the ham with foil and bake at 325° until a thermometer reads 140° for fully cooked ham. Whole bone-in fully cooked hams need about 15-18 minutes per pound.
- Choose your ham glaze. This shimmery beauty features a Citrus-Molasses Glaze. To prepare it, simmer these ingredients in a sauce pan until reduced by half
- Check the ham about 45 minutes out. When the ham reaches around 130°, you’re closing in on final doneness. And the fun is ready to start!
- Get glazin’ Carefully remove the ham from the oven and brush it with glaze. Bake ham, uncovered, for 30-45 more minutes, basting and brushing occasionally with the glaze.
- Carve up that juicy perfection. Here’s a step-by-step tutorial for carving up that crave-worthy ham.

- Preheat oven to 325°F. Trim off ham rind to expose thick layer of fat underneath. Use a sharp knife to score fat in a diamond pattern, making sure to not cut all the way through. Press 1 clove into center of each diamond. Place ham in a large roasting pan and pour in 2 cups of water. Cover loosely with foil and bake until heated through, about 18 minutes per pound (2 hours 25 minutes for an 8-lb. ham).
- Make glaze: Combine molasses, mustard, lemon juice and butter in a small saucepan. Stir over medium-high heat until butter has melted and mixture is blended.
- Remove ham from oven and brush entire ham with about 1/4 of glaze. Return ham to oven and continue baking, uncovered, until a meat thermometer inserted into thickest part of ham reads 160°F, about 45 minutes. Brush with remaining glaze every 15 to 20 minutes of baking time.
- Transfer ham to a work surface and loosely cover with foil. Let stand at room temperature for 15 to 20 minutes before thinly slicing.
