CHRISTY'S CROCK POT CHLI
A variation on the Wendy's chili for the crock pot. I serve either with shredded cheese or sour cream and crackers.

Steps:
- Brown ground beef until done and drain off fat.
- In large crock pot (5qt size), combine the beef plus all remaining ingredients. Stir to combine and cover. Cook on low 7-8 hours or high for 3-4 hours.
EASY CROCK POT CHILI
My latest chili recipe - I've found it tastes best if made the day before. Adjust the heat by using hot, medium or mild picante sauce and taco seasoning (I use hot for both). Red pepper flakes are optional, but I like it hot and use 2 teaspoons.

- Heat the olive oil in a large skillet. Add the onion and cook, just until translucent. Add the garlic and cook until fragrant, about 30 seconds. Add the ground beef and cook, breaking it up as it cooks, until it is browned and cooked through.
- Place the pinto beans, kidney beans, tomato sauce and diced tomatoes in a large slow cooker. Stir in the chili powder, oregano, cumin and garlic powder. Stir in the cooked ground beef mixture. Stir in the Worcestershire sauce, hot sauce and pepper liquid. If the chili is too thick, stir in the water.

- Add onion and saute 3 minutes, then add garlic and saute 30 seconds longer. Pour onions into a 6 or 7 quart slow cooker (I like this one HERE).
- Return skillet to medium-high eat, add beef and cook stirring occasionally until beef has browned.
- Drain most of fat from beef, leaving about 2 Tbsp in with beef (this is optional, I think it ads flavor but you can drain it all if you'd prefer). Pour browned beef into slow cooker.
