CHUCK ROAST WITH BALSAMIC AND DIJON

Discovered in an online search for recipes for a Pampered Chef Deep Covered Baker, I tweaked the cooking time and added instructions for making a gravy from roast juices. Thanks to TheWickedNoodle blog for sharing original recipe and photo. This roast is flavorful, moist & yields a delicious gravy. And making a pot roast is all about the gravy, right? !

Chuck Roast With Balsamic and Dijon image

Steps:

  • Preheat oven to 300°F.
  • Heat oil in a large Dutch oven over med-high heat. Season chuck roast well with salt and pepper, add to pan and brown well on all sides (a few minutes on each side). Remove roast and set aside.
  • Add chopped onion to drippings in pot and reduce heat to medium. saute onions until soft, about 5 minutes. Add balsamic vinegar, increase heat to medium-high and boil until reduced and slightly syrupy, abiut 4-5 more minutes. Stir in Dijon.
  • place onion mixture in bottom of Pampered Chef Deep Baker (or your favorite Dutch Oven). Set seared roast on top of onions. Pour in beef broth in a quantity to submerge 1/2 of the roast for Braising. (Too much broth will Boil your roast.) Place thyme sprigs on top of roast. Cover and place in oven for 2 hours.
  • Add carrots and potatoes to pot, cover and return to oven. continue cooking for 2 hours.
  • Separate juices; remove thyme sprigs; cover roast and vegetables to keep warm.
  • Make a roux for your gravy: In a small bowl combine 1/4 cup beef stock and flour until smooth. Pour into large skillet and turn heat to medium. Using a whisk, stir constantly until mixture browns.
  • Reduce heat of skillet to Low. Add roast juices with onion chunks (or strain juices if you prefer a smoother gravy) to the roux in the skillet. Whisk until juices are incorporated.
  • Simmer gravy, whisking occasionally, until gravy reaches desired consistency. Season with salt and pepper to taste.
  • Serve and enjoy!

1 bunch baby carrots
5 sprigs fresh thyme
1 yellow onion, chopped
2 -2 1/2 cups beef stock, divided
1/3 cup balsamic vinegar
2 tablespoons Dijon mustard
2 tablespoons canola oil
kosher salt, to taste
fresh ground pepper, to taste
2 -3 tablespoons flour

Steps:

  • In a large bowl, mix barbeque sauce, teriyaki sauce, beer, garlic, ginger, onion, black pepper, and salt. Place the roast into the marinade, cover and refrigerate for six hours, turning often.
  • Preheat an outdoor grill for indirect heat. Remove the roast from the marinade, and pour the marinade into a saucepan. Bring to a boil, and cook for 5 minutes. Set aside for use as a basting sauce.
  • Thread the roast onto a rotating barbecue spit above indirect heat. Cook the roast for two hours, or until the internal temperature of the roast is at least 145 degrees F (63 degrees C). Baste often during the last hour with reserved marinade.

  • Heat oil in a large pan (or dutch oven if cooking in oven) over high heat. Season chuck roast well with your favorite season-all. Brown the chuck roast on all sides. Remove roast and set aside.
  • Reduce heat to medium. Add the chopped carrots and onion to pan. Saute onions and carrots until slightly browned about 5 minutes. Add the thyme and the wine. Scrape the browned bits from the bottom of the pan. Let wine reduce about 2-3 minutes. Add the balsamic vinegar, dijon, and beef broth. Stir well to combine and remove from heat.
  • Place the roast in the crock pot or dutch oven, add onion and carrot mixture and the chopped potatoes to the top in the crock pot.
  • Set crock pot on low and cook 4-6 hours or until the chuck roast is tender. If using the oven, cover and place in a 325 degree oven for 2 1/2 – 3 hours.
